Fortunately, these seasonal casserole faves are all Weight Watchers-friendly and bursting with juicy pieces of tender chicken, veggies, and decadent sauces that will go perfectly with your comfy clothes and downtime.

1. Mexican Chicken Casserole

It’s also brimming with antioxidants thanks to three cloves of garlic, making it a secretly healthy treat for your fall evenings.

I love to make this four-point recipe when I’m bone-tired after work because it only calls for five ingredients and hits all the high notes in terms of flavor and texture. Cooked chicken breast and frozen vegetables mingle in a thick three-ingredient sauce that requires only low-fat cream of chicken soup, fat-free sour cream, and milk. Top it all off with some pre-cooked Stove Top stuffing and let it crisp until golden for 25 minutes in your oven.

With all the feel-good flavors of a fab chicken soup and the heft of a casserole, this six-point meal is nutritious, filling, and endlessly satisfying. Plus, you can have it on the table in under half an hour as long as you have some cooked chicken breast on hand. I love how every bite is packed with thick egg noodles and chunks of delicious chicken, all swimming in a luxurious cream sauce. You’ll also get plenty of nutrients from the peas and carrots, making this dish a win on all levels.  

5. Asian Chicken Casserole

You can get your casserole fix for four Weight Watchers points when you make this Asian-inspired recipe; that’s the perfect, healthy alternative to take out. Pre-made biscuit dough slices down your prep time and gives each bite a flaky and buttery texture. What really makes this recipe shine for me is the sauce, though. It’s a combination of teriyaki, lime juice, ginger, and brown sugar that plays perfectly with ground chicken and thinly sliced red cabbage. I like adding a bit of sriracha for an extra spice kick, but it’s optional.  

6. Chicken Parmesan Casserole

This bubble-up casserole recipe features delicious pieces of biscuits, delectable shredded chicken, peppers, and plenty of tasty cheese for a smart riff on Chicken Parmesan that will only set you back between five to seven points depending on what kind of pasta sauce you use. I like to toss some heart-healthy mushrooms for a nutritional boost, but you can use anything in your refrigerator. 

7. Chicken Spinach Artichoke Casserole

This six-point recipe is one of my family’s ultimate favorites, and since it’s packed with nutritious veggies and chicken, I’m happy to indulge them. Plus, the flavors are a spot-on duplicate of your favorite spinach and artichoke dip, just without the side of guilt. Cream cheese, mayonnaise, and sour cream make up the bulk of the sauce, Parmesan and mozzarella cheeses give it delicious flavor, and pre-made biscuits provide a fluffy base for the artichokes, fresh spinach, and shredded chicken.

8. Harvest Chicken Casserole

This casserole is an excellent way to properly celebrate fall flavors and enjoy an ultra-hearty meal for just five Weight Watchers points. It’s full of juicy, roasted chicken breast, generous chunks of sweet potato and carrots, Brussels sprouts, brown rice, and cranberries, all in a satiny mushroom sauce. I like to add some almonds for a bit of crunch and an extra treat at the end. 

9. Bell Pepper Chicken Casserole

Bright bell peppers and chicken get proper recognition in this two-point Weight Watchers casserole, which is a super diet-friendly option on a crisp fall day. I like to use a mixture of different-colored peppers for a touch of visual interest, but you can use whatever you have on hand. The casserole also includes chicken breasts, a bit of taco seasoning, cumin, onion, and some mozzarella cheese to sprinkle on top. It has all of your classic fajita flavors with substantially fewer calories. 

10. Weight Watchers French Onion Chicken Casserole

There are few things I love more in this world than a big bowl of cheesy, rich French Onion soup, which is why this five-point casserole is always on heavy rotation in my home. Plus, you can get it on the table in under an hour. It’s great for a weekend treat or an autumnal dinner party. Sweet caramelized onions, chicken breast, and garlic get a boost from the cream of chicken soup, and the addition of both cheddar and Emmental cheese is a positive upgrade from the original version.

11. Chicken Pot Pie Bubble Up

Homemade chicken pot pie really hits the spot on frosty nights, and this bubble-up version slims down the original while still giving you tons of flavor and nutrients. It will set you back a mere five points and is studded with chopped carrots, broccoli, and chicken and topped with flaky Pillsbury biscuits in a luxe cream sauce. 

12. Buffalo Chicken Pasta Bake

Make this recipe when you’re craving take-out wings; you won’t regret it. For seven Weight Watchers points per serving, you can get all the classic flavors of Buffalo wings and the carb kick of pasta in one fabulous casserole. You also only need a handful of ingredients, like whole wheat pasta, light cream cheese, Franks hot sauce, light Ranch dressing, and shredded chicken. Sprinkle a handful of reduced-fat cheese on top, and you will have a meal to cheer for.

13. Chicken Caesar Bubble Up

This five-point bubble-up recipe is packed with tasty protein like shredded chicken, bacon, and two kinds of cheese for a meaty and scrumptious meal that will keep you full for hours. You will also get your dose of veggies with diced green pepper and vibrant red onion. Fat-free Caesar dressing and fluffy biscuit pieces tie the whole thing together beautifully, and you have a casserole that pays homage to the traditional flavors of a Caesar salad in a new and exciting way.
