Variations and substitutions

I love the light, vanilla flavor of these muffins as they are, but it’s also SO easy to make swaps that fit your dietary needs and flavor preferences. Here are some ideas:

  • Non-dairy milk: If dairy isn’t an option for you, swap out the milk for oat, coconut, or almond milk. Soy milk would also work.
  • Refined sugar-free: To lower the points even further, try swapping out the brown sugar for an alternative sweetener like maple syrup, honey, or stevia.
  • Fun add-ons: If sprinkles aren’t your thing, you can try adding sliced almonds or walnuts, blueberries, lemon zest, or chocolate chips.
  • Alternatives to apple sauce: In place of apple sauce, you could use mashed bananas, greek yogurt, or even peanut butter.
  • Egg-free: Omit the eggs and add an additional ½ cup of milk or replace the eggs with flax eggs.
  • Gluten-free: Use a 1:1 style gluten-free flour mix.

Tips and Tricks for Kodiak Sprinkle Muffins

  • Check for doneness: Stick a muffin with a toothpick to make sure they’re fully cooked. No wet batter should come out on the toothpick.
  • Batter consistency: Muffin batter ranges from thin and runny to very thick. Generally, the thinner the batter, the lighter the muffins will be when baked.
  • Storage: The muffins store well in an airtight container at room temperature for 3-5 days or keep them in the refrigerator for up to 5 days.

  1. I have made these several times and love them! I found out the hard way though that they should be refrigerated if you plan to keep them for more than a few days. Super easy and they make a great snack.

    1. So glad you enjoyed them Ashley, yeah most of my baked goods should be kept in the fridge or frozen, just due to ingredients used

  2. I am so happy I found your blog and Instagram! These are currently in the oven and my 5 year old is ecstatic lol. I actually got 16 muffins out of the batter, so they are only 1 point each 🙂 I also ran out of unsweetened regular apple sauce, but I had some unsweetened strawberry apple sauce. So used 1/3 cup of each.

    1. Wow that is awesome they are only 1SP 🙂 and I love the idea of using the strawberry applesauce, I must try that! I hope your little one enjoyed them, and you too 🙂

  3. I love these! My son and I are trying to find healthier choices for snacks and these ate fabulous for that! Thank you for sharing!! ?

  4. Are these full size muffins or mini muffins? It didn’t say and as I am making them now i am using mini and it is maki g way more than 12. That is why i ask if it should be fill sized?

  5. Thanks for a great recipe. I will apologize in advance because I plan to use it as a “base” for super high protein muffins I make for my husband. He eats one every day for lunch. I usually use one with a pumpkin base adding vanilla protein powder, chia seeds, spices, vanilla and dried fruits. The goal is definitely NOT WW points but a healthy, following muffin meal. I thank you for a new starting point for variety for the man I cherish! ?

    1. Hi Gina…Awww I love how much love you have for him! The muffins sound awesome, thanks for sharing!

  6. I made these today. I used mini chocolate chips and I used a mini muffin pan. It made 24. I used everything and even put the recipe in my WW recipe builder. It came out with 2 points a piece. There’s no way they should be 2 when yours is 2.. right?

    1. Hi, chocolate chips are quite high in points so depends how many you used, and what program are you following, these are 3SP on green
