Variations and substitutions
I love the light, vanilla flavor of these muffins as they are, but it’s also SO easy to make swaps that fit your dietary needs and flavor preferences. Here are some ideas:
- Non-dairy milk: If dairy isn’t an option for you, swap out the milk for oat, coconut, or almond milk. Soy milk would also work.
- Refined sugar-free: To lower the points even further, try swapping out the brown sugar for an alternative sweetener like maple syrup, honey, or stevia.
- Fun add-ons: If sprinkles aren’t your thing, you can try adding sliced almonds or walnuts, blueberries, lemon zest, or chocolate chips.
- Alternatives to apple sauce: In place of apple sauce, you could use mashed bananas, greek yogurt, or even peanut butter.
- Egg-free: Omit the eggs and add an additional ½ cup of milk or replace the eggs with flax eggs.
- Gluten-free: Use a 1:1 style gluten-free flour mix.
Tips and Tricks for Kodiak Sprinkle Muffins
- Check for doneness: Stick a muffin with a toothpick to make sure they’re fully cooked. No wet batter should come out on the toothpick.
- Batter consistency: Muffin batter ranges from thin and runny to very thick. Generally, the thinner the batter, the lighter the muffins will be when baked.
- Storage: The muffins store well in an airtight container at room temperature for 3-5 days or keep them in the refrigerator for up to 5 days.
