This berry french toast isn’t just about satisfying your taste buds, though it certainly does that in spades. With low-calorie bread soaked in a hint of vanilla and cinnamon, it’s a sweet and comforting foundation for the star of the show – a vibrant burst of fresh berries. But even better than the explosion of flavor? This french toast is surprisingly light and guilt-free, clocking in at just 6 Weight Watchers points per serving. Ingredients you need to make Berry French Toast: 

  • 12 pieces low-calorie bread (I used Weight Watchers whole wheat bread)
  • 6 eggs
  • 1 ⅓ cup low fat milk 
  • 1 ½ cup fresh berries (I used raspberries, strawberries, and blueberries)
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1.5 teaspoon vanilla extract
  • 2 tablespoon sugar
  • 2.5 tablespoons all purpose  flour
  • ¾ tablespoon melted light butter (I use Gay Lea)

How to make Berry French Toast (step by step): 

  1. Cut the 12 pieces of bread into small 1-inch pieces, and spray a 9-inch dish with nonstick cooking spray. Place half of the bread on the bottom.
  2. In a bowl or a large measuring cup,  whisk together the eggs, milk, honey, vanilla extract, and cinnamon.
  3. Place half of the fresh berries on top of the bread in the casserole dish, then top with remaining cut bread. 
  4. Pour the egg mixture over the top, making sure to cover all areas. Push down on bread a bit so it all gets soaked in. Top with remaining berries, cover with foil and refrigerate for at least one hour. 
  5. In a small bowl mix the sugar and flour together, then stir in the melted butter until a crumble forms. Sprinkle this crumble on top.
  6. Preheat the oven to 350F, and bake covered with foil for 30 minutes. Remove the foil and continue baking for 25 minutes. 
  7. Serve warm and enjoy!

  2. My husband does not like any kind of berries. I know, crazy right?! Do you think it would be ok to just leave the berries out?

  7. I made this for my breakfast meal prep for the week… fantastic! It fit perfectly well in a 9 x 13 pan and I used frozen berries. I omitted the crumble just to save some points and added Truvia to the egg mix. Thank you so very, very much for your creativity and generosity!
