Happy October everyone! I thought I would celebrate the month sharing these new pumpkin spice donuts with brown sugar buttercream icing.. Yes a mouthful of a name and oh man are they ever delicious!! The icing makes them seem like a cheat donut but these tasty treats are just 3 smart points each… so what are you waiting for.. go bake some up today..and your welcome ๐
Pumpkin spice donuts with brown sugar buttercream icing

Ingredients
- 2 Tbsp egg whites (I use from the carton)
- ¼ cup pumpkin pure (canned pumpkin)
- ⅓ cup milk (I used skim)
- 1 tsp vanilla
- ½ cup + 2 Tbsp flour
- 1 tsp baking powder
- 1 Tbsp brown sugar
- 1.5 tsp pumpkin spice (or ½ tsp each of cinnamon, all spice and nutmeg)
- FOR THE BUTTERCREAM ICING
- ½ Tbsp butter, melted
- 1 Tbsp brown sugar
- ½ Tbsp milk
- 2 Tbsp icing sugar (confectionery sugar)
Instructions
- Preheat oven to 350F, spray a 6 hole donut pan with some cooking spray.
- In a bowl whisk together your egg whites and 1 Tbsp of brown sugar. Add in pumpkin, ⅓ cup milk and vanilla and mix well.
- Stir in flour, baking powder and pumpkin spice.
- Divide batter into your 6 donut hole pan.
- Bake in oven for 14-16 min.
- Meanwhile you can make your frosting, stir melted butter and 1 Tbsp brown sugar together in a small bowl. Add in ½ Tbsp milk and your icing sugar and stir well, store in fridge till donuts are baked. Top donuts with icing, optional to top with a few chopped raw pumpkin seeds.

This looks amazing! I don’t have a donut pan but I wondered if they would turn out the same as muffins? Would they take longer in the oven? Thanks ๐๐
