Although nothing beats a warm bowl of soup on a cold winter day, I will enjoy it just as much on a hot summer day (in air conditioning of course haha). I typically make soups in my crock pot but you can just as easily make them in a pot on the stove. If you want a hearty creamy soup, this bacon cheeseburger soup will not disappoint!

I used ground chicken to keep points low but you could swap out for ground beef if you don’t mind spending some extra points. This is probably one of the creamiest soups I’ve made and I was instantly in love with it. Hash brown potatoes work great in it and keep it simple. I’ve linked the one I use here so you can see the brands I buy and compare nutrition. If you have been craving a tasty creamy delicious soup I highly recommend this one. Go make it now haha!

Three reasons why you need to make this recipe!

Bacon Cheeseburger – but healthy!

While a bacon cheeseburger can be delicious, it’s definitely not the healthiest option. It can be extremely high in fat and calories. This soup recipe gives you all the bacon cheeseburger flavor, but for just 5 grams of fat and 211 calories per serving.

It’s healthy, hearty, and creamy.

Like I said, there’s not much better than a hearty, creamy soup. A bit of flour helps thicken this soup up, and the base is made of skim milk, reduced-fat cheese, and light butter.

It’s a great family dinner option.

The full bacon cheeseburger soup recipe makes 12 cups, so it’s perfect if you’ve got a family to feed. It also has the crockpot do the bulk of the work, so it’s excellent on busy weeknights.

Ingredients you need to make Bacon Cheeseburger Soup:

  • 1 lb fat free ground chicken, weighed raw
  • 3 cups frozen hash browns *See the beginning paragraph for the ones I use.
  • 1.5 cups chopped carrots
  • 1.5 cups diced onion
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 teaspoon basil
  • 6 slices cooked and crumbled Oscar Mayer center-cut bacon
  • 1 cup reduced-fat shredded cheese – any kind will do
  • 2 tablespoons light butter
  • 3 tablespoons all purpose flour
  • 2 cups low-fat, skim milk

How to make Bacon Cheeseburger Soup (step by step):

  1. Cook the ground chicken in a pan on the stove and drain. Add the chicken, hash browns, carrots, onions, chicken broth, salt, pepper, garlic powder, onion powder, and basil to a crock pot. Stir well, and cook on high for 3 hours, or low 6 hours.
  2. About 15 minutes before the cooking time is up, make the roux that will thicken the soup. Cook the bacon at this time if you have not already.
  3. To make the roux, in a pan over med-low heat on the stove melt the butter, and add flour, and stir. Let it cook until it’s bubbly, and you can smell it. You don’t want it to turn brown. Slowly start to whisk in the milk. Stir continuously for about 5-10 minutes until sauce thickens. Once the sauce is at a creamy texture, add it to the crock pot. Then stir in the cheese and crumbled, cooked bacon.
  4. Let the bacon cheeseburger soup cook for another 20 minutes to melt all the cheese.
  5. Serve warm and enjoy!

Different ways to change up this recipe:

  • If you’re short on time, you can use a sprinkle of bacon bits instead of cooked bacon.
  • As stated above, feel free to use extra lean ground beef if you prefer. The ground chicken just helps it stay low in points. It’s still delicious!
  • To lower the points even more, you can take out the hashbrowns and add diced cauliflower instead. It gives the same texture as potatoes without all of the calories, carbs, and points.

Tips and Tricks for Making Bacon Cheeseburger Soup:

  • Feel free to add in some celery along with the diced onion and chopped carrots. I choose not to as I am not a fan. If you do then maybe add a little extra broth.
  • This soup will freeze well! You can freeze individual portions in zip-loc bags, then pull a serving out as needed.
  • Store bacon cheeseburger soup in the fridge for up to 5 days.

  1. Made the soup this weekend just as the recipe was written and it was delicious! Have some frozen for chilly fall nights when I want something warm.

    1. Yes absolutely! Any ground meat will work well with the soup, I just used chicken to keep the points low, the ground beef will add extra points

  2. Love love love this recipe. I made it on a Monday and ate it every day for lunch this week and was sad there was none left today. I used fresh potatoes instead of hashbrowns and it didn’t hurt it.
Thanks for making Weight watchers a little easier!

  3. A big hit for the whole family! This soup is delicious! I switched out the ground chicken for shredded chicken breast.

I just made this tonight and it is so yummy! Will definitely be making this again. I did add a bit of corn starch to thicken it up but I normally put a little too much broth it.

  5. I made this tonight using the 99% fat free ground Turkey because I cannot find ground chicken where I live. I also made it in the stove top. I cooked the Turkey then removed it. I sautéed the veggies then added the chicken, broth and seasonings. I cooked for about 15 minutes or so then added the potatoes. I ended up adding about a cup more of broth and the rest of the potatoes in the bag. I mashed it all a little with a potato masher before adding the milk roux. I kept the roux mixture ingredients the same. Turned out amazing. Thank you!

  6. Oh my god this soup is delicious!!! I am a huge soup fanatic and was looking for some low point recipes. Boy this did not disappoint! And so low in points!! I tweaked it a little bit and used turkey bacon and oat milk but I’m seriously impressed! Your a recipe genius!!
