Different ways to change up this recipe:
- This is the best muffin recipe to hide veggies in. With all of the cheese and the spicy pepperoni, you’re not going to taste the veggies if you use bland ones like zucchini, cauliflower, or yellow squash. Make sure to shred the veggies and squeeze any water out with paper towels before adding to the muffin batter.
- If you need to omit the egg, increase the milk to 1 cup and increase the baking soda to 1.5 teaspoons.
- Use ground turkey spiced with dried sage if you don’t like pepperoni. It will make it taste like turkey sausage pizza muffins.
- A great addition to this recipe is chopped fresh basil, roasted garlic, black olives, or even green olives. Anything that you like on your pizza!
- Use turkey bacon and/or turkey pepperoni to lower the points – although these already are 2 points per muffin. It doesn’t get much lower than that!
Tips and Tricks for Making Pizza Muffins:
- Like most muffins, these freeze very well. Just make sure they are all the way cooled before wrapping and storing them in the freezer.
- When looking for a marinara sauce or pizza sauce to use for dipping, find a “no sugar added” sauce. Prego makes a great one. You don’t need the extra sugar in regular pizza sauce. It will save you calories and it still tastes great.
