Today, I’m sharing a fruity, delicious 5-point Weight Watchers Berry Croissant Breakfast Casserole that you definitely won’t want to miss out on. It has a lovely assortment of flavors and textures between the buttery croissants, fresh fruit, and silky cream cheese custard. This is one of those breakfasts that is healthy but almost feels like dessert because of how crave-worthy it is.
This breakfast bake is like having a breakfast plate with a freshly baked croissant, a bowl of fruit salad, and a creamy custard, except all of the components are baked together to create something truly magical. It starts with a base of butter croissants, so it’s no wonder why it’s so amazing. Then goes the layer of chopped strawberries, tart raspberries, and juicy blueberries. The cream cheese mixture then tops it all.
You can serve this with some crispy bacon, a nice bowl of oatmeal, or other yummy breakfast sides. Or, if you prefer a light breakfast, just enjoy it on its own. To make it extra special, sprinkle on some powdered sugar, drizzle icing over the top, or even put a dollop of fat-free whipped cream to take it to the next level.
Why You Should Try This Recipe
- It tastes incredible! When it comes down to it, the main reason you need to try this breakfast casserole is because it’s simply delicious. I mean, downright irresistible. Take one bite, and you’ll see for yourself what I mean.
- It requires simple ingredients. Every single ingredient can be found at the local grocery store, so there is no need to go to specialty stores to search for a specific item.
- It’s healthy. It has a good amount of fiber, protein, and calcium, with some iron and vitamin D as well. The eggs in the custard provide the protein and help get your day started right! And the berries are perfectly light and fruity.

- 1 ½ cup Unsweetened plain almond milk or fat-free milk
- 6 oz Reduced-fat cream cheese, softened
- ½ cup Monk fruit sweetener (or other 1:1 zero-calorie sugar replacement)
- 1 tsp Vanilla extract

- 12 oz Raspberries
- 6 oz Blueberries
Instructions for making Weight Watchers Berry Croissant Breakfast Bake (Step by Step)
- Preheat oven to 350F. Break up the large baked croissants and scatter them in a greased 9 x 13 baking dish.
2. Scatter the blueberries and raspberries over the croissants, as well as half the strawberries.
3. Make the cream cheese custard by first whipping the softened cream cheese until light and fluffy with no lumps. Add the eggs one by one, scraping the sides of the bowl in between each addition. Mix until incorporated.
4. Add the remaining custard ingredients and mix to combine. Pour over the croissants and fruit. Add the remaining strawberries on top.
5. Bake the casserole for 45-55 minutes or until the custard is set but still jiggly (rather than rippling like liquid if you give it a shake). It will also puff up a bit, and the edges of the fruit will start to look syrupy.
Variations and Substitutions
- Using Crescent Rolls: You can use reduced-fat crescent rolls, but you will have to bake them first and use more for them to fill the pan.
- Other Bread Types: You can also use baked biscuits or leftover bread as the base for this casserole!
- Fruit: Experiment with different types of fruit! Use banana slices, peaches, blackberries, cherries, or even dried fruit.
- Milk Type: You can also use another type of plant-based milk or 1% or 2% milk, and the casserole will firm up just fine.
- Sweetener vs Sugar: If you would rather use granulated sugar instead of zero-calorie sweetener, it will increase each serving to 7 WW points.
Tips and Tricks for Making Weight Watchers Berry Croissant Breakfast Bake
- When mixing the custard, make sure to scrape down the side of the bowl. Otherwise, the mixture will be lumpy. Using eggs and milk that aren’t super cold can also help prevent lumps (take them out of the fridge 20 min. beforehand).
- Make Ahead: Assemble the croissants and berries in the pan and make the custard mix. Cover the baking dish and the bowl of custard mix separately. In the morning, pour the mixture over the top and put it right in the oven to bake!
- How to Store Berry Croissant Casserole: You can keep it in the same dish you baked it in. Simply tightly cover it with aluminum foil or plastic wrap. It will last 3-4 days in the fridge.
- Be careful not to over-bake the custard, as the croissants on the bottom will burn. The casserole is done when you insert a knife into the center, and the custard doesn’t seep toward the knife but instead holds its shape. The custard should no longer be liquid.
