These Weight Watchers Corn Fritters are incredibly delicious with the natural sweetness of corn, zesty jalapeños, crunchy bell peppers, and hints of paprika and garlic. And they’re only 1 point for two fritters, so what’s not to love?
This lightened-up version of old-fashioned fritters can be your go-to side dish or snack for the rest of summer— they’re made with simple ingredients and are customizable depending on if you want them to be spicier or heavier on the herbs. Feel free to mix in whatever you like to make them your own.
This has been my favorite recipe for corn fritters I’ve created thus far. They have the right amount of seasoning, and the recipe uses fresh corn instead of canned. Plus, since the batter’s base is made with mostly eggs and some accompanying flour, it keeps them low in points.
If you’ve never made homemade corn fritters, the good news is that it is not a difficult process at all. With this recipe, no oil is involved. It’s honestly easy enough for beginner cooks or older kids to make. And the results are quite simply amazing. I’ve been craving them ever since I made them, so I know you’ll feel the same once you give them a try.

Ingredients in Weight Watchers Corn Fritters
- 4 ears Corn on the cob, shucked, rinsed, cut off the cob
- 3 Eggs
- ¼ cup Green onions, thinly sliced
- 1 medium Red bell pepper, small diced
- 1 small Jalapeno, small diced
- 5 tbsp All-purpose flour
- ½ tbsp Minced garlic
- ¼ tsp Paprika
- ½ tsp Table salt, plus more to taste
- 3 pinches Black pepper, plus more to taste

Instructions for making Weight Watchers Corn Fritters
- After the ingredients have been chopped and you’ve properly cut the kernels off the cob, mix the corn with the chopped bell pepper and jalapeno.

2. In a separate bowl, whisk the remaining ingredients until the egg mixture is frothy.
3. Fold the egg mixture and corn mixture together.
4. Heat a nonstick skillet over med-high heat. Spray it with cooking spray.
5. Once the skillet is hot, drop the corn fritter batter into the skillet with a spoon or scooper, leaving some space in between them. I made mine about 3 tbsp each so they would be a decent size (make sure that every scoop has some of the liquid to bind it). You’ll likely need to work in batches.
6. Allow the fritters to cook for 2-4 minutes until golden brown, and flip to the other side. Cook the other side for the same amount of time or longer if needed. They need to be thoroughly hot, golden brown, and completely set.

7. Enjoy immediately with your favorite dipping sauce.
Variations and Substitutions
- Canned or Frozen Corn: You can also use canned, drained corn or frozen corn that has been thawed and drained. Each ear can vary in size, but they yield about ½ to ¾ cup each. So, for this recipe, you can start with 2 cups of corn and then if it seems like there is too much batter/it’s too wet, then work your way up to 3 cups if needed.
- Vegan or GF Corn Fritters: This recipe is adjustable for special diets! To make them vegan, you can use an egg replacement like Just Egg. To make them gluten-free, simply swap the flour for an all-purpose GF flour blend and check to make sure the other ingredients don’t have any gluten contaminants.
- Corn fritters with Cheese: Add in some fat-free cheddar cheese or some parmesan cheese for extra flavor!
- Dipping Sauce Ideas: If you have some extra WW points to use up, feel free to serve these yummy fritters with sauces or condiments. Some dipping sauce ideas include light ranch dressing, avocado dip, spicy aioli, or a yogurt dip. And honestly, corn fritters with honey butter are to die for, especially these ones, since you get a bit of sweet and spicy notes.
- Zucchini Corn Fritters: Grate one small zucchini and press the extra liquid out of it. If needed, add one extra egg so there is more binder to make up for the extra ingredient.

Tips and Tricks for Making Weight Watchers Easy Corn Fritters
- The egg mixture might go to the bottom of the bowl, so don’t forget to redistribute it occasionally. When dropping the corn fritter batter on the pan, make sure to scoop some of the egg mixture in each spoonful to ensure they bind together and don’t fall apart.
- If the pan begins to smoke, turn the heat down a little. This will prevent the fritters from browning too fast or burning. You can also take breaks between batches.
- The more frothy you make the egg mixture, the lighter of a texture the fritters will have. You can even separate the egg whites, whip them, and then fold them in last to make them fluffy.
- If you want them extra crunchy, you can also pop them in the air fryer for a minute or so at the end of cooking to give them a thicker crust.
- If you only have one fritter, it will count as zero points since it contains such a small amount of flour.
