If you are addicted to Starbucks egg bites, then you need to try this weight watchers instant pot egg bite recipe (just 1 weight watchers point per egg bite!).
The version I made below is cheddar broccoli egg bites, but this recipe is extremely flexible. I will show you how to customize it however you like below.
If you have a sous vide machine, you can use it to make sous vide egg bites, which are extremely similar to these instant pot egg bites. But the instant pot is just so much easier, and it’s useful for so many healthy recipes–so that’s what I used today.
If you are looking for a true Starbucks egg bites copycat recipe, I’ll share that down in the variations section also. (Spoiler alert: use cottage cheese).
The version of the recipe I made below is both hearty and healthy. (It rings in at 1 weight watchers points). I think this version of the recipe is delicious and worth every ww point–but if you are looking to reduce the point total even further, I will show you how below.

Special Equipment needed for Weight Watchers Egg Bites
These tasty egg bites are made using an Instant Pot, and it really does make many healthy recipes much quicker. (I don’t have any kind of relationship with Instant Pot, this is just my opinion).
In addition to an Instant Pot, you will need an egg mold that fits into the instant pot. You can buy these egg molds on Amazon for between $8 and $30 depending on how many additional bells and whistles you want to.
You will want to get an egg mold that comes with a steamer rack trivet, and a silicone cover for the egg bites.
You can also use the molds for mini-muffins, cupcakes, or even popsicles if you throw it in the freezer.
In the photo, you can see which egg mold I bought, but let me know down in the comments if you have had luck with a different mold.
Ingredients for Cheddar Broccoli Egg Bites
- 4 large eggs
- ⅓ cup whole milk
- ½ cup finely chopped raw broccoli
- ¼ cup shredded cheddar cheese
- ⅛ tsp black pepper, optional
- Pinch of salt, optional
How to make Weight Watchers Instant Pot Egg Bites
- Turn instant pot saute function on. Allow to heat up for 1 minute. Add 3 tablespoons of water.
- Quickly saute broccoli in instant pot until softened and bright green (approximately 2 minutes). Remove broccoli from instant pot
- Whisk together eggs, milk, salt and pepper and set aside
- Divide broccoli and cheese equally between egg bite molds. Pour egg mixture evenly between molds. Make sure to leave a small gap between top of liquid and top of mold. Place silicone lid on mold (or use aluminum foil if your lid is plastic).
- Pour one cup of water in Instant Pot. Place egg bite mold on Instant Pot trivet and use handles to place in Instant Pot. Replace lid. Set instant pot to Pressure Cook on High for 8 minutes. When pressure cooking is complete, allow an 8 minute natural pressure release before doing a quick pressure release and opening lid.
- Put egg bite mold in freezer for two minutes to allow it to be handled more easily and make the egg bites slide out easier.
- Pop out egg bites out onto serving tray and enjoy.
Variations/Substitutions
How to make copycat Starbucks Egg Bites
- Copycat Starbucks Bacon and Gruyere Egg Bites
- Use favorite method to cook bacon and chop into small pieces
- Whisk together eggs, cottage cheese, salt and pepper. (Note: You are replacing the milk from the recipe above with cottage cheese)
- Evenly divide bacon and gruyere into egg molds
- Pour egg mixture over bacon and gruyere.
- Cook in instant pot in the same way as in the recipe above.
Can I use non-fat milk and low fat cheese?
You can replace the whole milk I use in the recipe above with skim milk, and you can substitute low fat cheese for the cheddar cheese. The cheddar cheese accounts for 5 of the 7 points in the ENTIRE recipe), so swapping out the full fat cheese will definitely lower your point total.
Since it’s not a huge amount of milk, I think it’s worth using whole milk to get the really smooth texture, but you can definitely substitute.

The recipe is so versatile, you can replace the broccoli and cheddar with just about anything. I love using red peppers and green peppers, but really you could add just about any kind of vegetable or lean meat and I think it would work well. - Putting the egg mold in the freezer for two minutes once it comes out of the instant pot is completely worth it. The egg bites pop out so much easier, and it makes it easier to handle.
- Make sure to leave a small gap between top of the egg liquid and top of the egg mold.
- I talked about it a little bit in the variations section, but the whole milk gives the egg bites a wonderful texture. I do think it’s worth the extra points.

I think without an instant pot, the easiest way to make these would be to use the same technique drizzle uses in the egg white breakfast cups linked above (https://drizzlemeskinny.com/egg-white-breakfast-cups/). The only difference with that approach is that the texture won’t be the same (the flavors would be the same though).
A sous vide machine would give you the same texture and flavor as these instant pot egg bites, but I don’t know many people that have sous vide machines.
If you had a silicone egg mold, but no instant pot, I expect you could place the egg mold in a steamer basket and cook the eggs until they set.
How long would it take for the eggs to set? I have never tried it before so I’m just guessing–but the instant pot on high heat is approximately 220 degrees F. So my speculation is that you could put the egg mold in a steamer basket for approximately 15 minutes and the eggs would set.
