I was craving a buffalo chicken dish, cause let’s be honest when am I not craving it 😉 I wanted to keep it simple and something I could whip up quickly as I did not have a lot of time to be spending in the kitchen.. well these buffalo chicken rolls did not disappoint, delicious and filling! They took me about 10 minutes to prepare and pop in the oven.. These rolls are super spicy and not for those who can’t handle the heat 😉 serves 4 at 4 freestyle smart points per serving, which is 2 rolls :).

Buffalo chicken rolls
4-7PP, 4 SP blue & purple, 7SP green
Ingredients
- 4- 7 oz boneless skinless chicken breast (raw)
- 3 oz softened light cream cheese
- 1.5 Tbsp Franks hot sauce
- 1.5 Tbsp light ranch dressing
- 1/3 cup reduced fat shredded 3 cheese blend
- 1/3 cup bread crumbs
- Franks sauce for coating the chicken
Instructions
- Preheat oven to 350F, spray a 9x9 dish with some cooking spray.
- Cut each chicken breast open in half.
- In a bowl mix your softened cream cheese, ranch, franks and shredded cheese.
- Brush your chicken with franks sauce and then spread cheese mixture on, about 1 Tbsp per roll.
- Roll up chicken and dip in bread crumbs making sure you cover all areas, seal closed with a toothpick. Some cheese mixture may try to come out the ends, its all good just try to keep it in the best you can.
- Lay out rolls in your dish and bake for 40 minutes.
- Makes 8 rolls and serves 4 (2 rolls per serving)

I love this recipe! My rolls don’t look nearly as tidy as yours, but they taste great!! How did you split the 4 chicken breasts into 8? I think I may have done that part wrong… but it all tastes the same right??
Hi Jillian, I cut the chicken breast open, so your left with 2 pieces the same size as the full piece was just thinner, if that makes sense 😉

Did you soften cream cheese or use the type that comes in the tub?
I usually soften it, pop in microwave on low heat for a bit

As a Buffalonian I HAVE to have some blue cheese with my chicken. Do you have any ideas for zero point blue cheese? Wondering if I got a powered blue cheese dressing, haven’t seen in stores but they have some on Amazon.
Hi, I am not too sure to be honest, I am not a fan of blue cheese, are you thinking the powder mix and yogurt? I’d say give it a go 🙂
That looks like a lot more than 1 TBL spoon per piece of chicken
It is a very close up picture so it might look like more, and when I say about a Tbsp it was more of a heaping one, plus I added to each one after I measured out the Tbsp as there was leftover .. you want to use up all you have
It’s been awhile since you asked so this may not help you, but for future readers Country Mart (and perhaps its parent company Town and Country) have a Blue Cheese dressing that is 1 pt (PP) per serving. It is Savory Collection brand and found in the $1 isle.
