This Impossible Cheeseburger Pie recipe will quickly become a family favorite.

A cheeseburger has such a classic and beloved flavor, it may be hard to imagine it as a pie. But this recipe is absolutely delectable and will quickly become a weekly favorite. It’s so easy too. Throw a few ingredients together into one dish, bake, and you’re done. You can even choose to batch prep a few pies because they freeze so well.

You’re not going to believe that you can get away with this much flavor in a dish, for so few points or grams of fat. A classic bacon cheeseburger can have up to 36 grams of fat and 16 grams of saturated fat. One slice of this impossible cheeseburger pie is only 13 grams of fat and 6 grams of saturated fat. You’ll only need 10 points if you’re following a weight watchers diet. It’s definitely worth saving those 10 points for this slice of pie. 

You can even play around with the flavor or points too by using a fat-free cheese, or different types of cheese. A fat-free cream cheese folded in would be a great, creamy choice and it would save you quite a few points. Make this recipe the way it’s written, and once you do you’ll see how easy it can be to adjust to your flavor preference.

If you get a cheeseburger meal with fries at any fast food joint, you’re going to be easily close to 1000 calories. With this lightened-up cheeseburger pie, you don’t have to miss out on the flavor just because you’re cutting calories. It really is an “impossible” cheeseburger pie. 

It’s a one-pot dish. 

You’ve got to love an easy to prep, easy to clean recipe. Throw all the ingredients into one pie dish, and you’ve got a fully balanced meal for lunch prep or dinner. 

The leftovers are even better. 

Bake this on a Sunday for your lunch meals for the week, trust me! Letting the flavors meld together after baking is a game changer. Having the “leftovers” of this pie is worth the wait. 

Ingredients you need to make Impossible Cheeseburger Pie: 

  • 1 package Pillsbury reduced fat crescent rolls
  • 1 lb extra lean ground beef
  • 2 Tbsp ketchup
  • 2 Tbsp honey Dijon mustard
  • 1/4 cup panko crumbs
  • 2/3 cup reduced-fat shredded grated cheese 
  • 4 slices Oscar Mayer center-cut bacon, cooked

How to make Impossible Cheeseburger Pie (step by step): 

  1. Cook the ground beef in a pan until there is no more pink. Drain off the fat. Cook the bacon and place cooked slices on paper towels to drain off the excess fat.
  2. Preheat the oven to 350F and spray an 8-inch pie dish.
  3. Open the crescent rolls and spread them out in the pie dish to form a pie shell.  This will involve a little trimming to make it fit well. It doesn’t have to be perfect, just as long as the whole dish is covered.
  4. Bake the dough in the oven for 5 minutes and remove. This will prevent the middle from not cooking all the way through. 
  5. In a bowl, mix the cooked ground beef, ketchup, mustard, panko crumbs, 1/3 cup cheese (leave the other ⅓ cup aside), and 2 slices of crumbled, cooked bacon (leave the other 2 slices aside).
  6. Pour the beef mixture into the dough shell. It might have puffed up a bit while in the oven and that’s ok. Just pour the mixture right on top. 
  7. Top with the remaining ⅓ cup of cheese and crumbled-up bacon. Bake in the oven for another 8-10 minutes, checking halfway through to be sure not to burn the dough.
  8. Let it cool a bit before cutting it into 6 slices. Serve and enjoy!

Different ways to change up this recipe: 

  • If you love pickles, adding diced pickles on top is delicious. 
  • You can use sugar-free ketchup if you want to keep the sugar down. G-Hughes is a great brand. 
  • You can use regular yellow mustard, dijon mustard, or honey Dijon mustard. They all work well in the recipe. 
  • The panko crumbs are a great addition but if you only have regular breadcrumbs in the pantry, they will work just as well.
  • I like using a three-cheese blend of shredded cheese. Feel free to use any kind of shredded cheese with this recipe. You really can’t go wrong with cheese!
  • You can drastically lower the points by using lean ground chicken and fat-free cheese. It won’t be the classic cheeseburger flavor, but it will still be a delicious, easy dinner.

Tips and Tricks for Impossible Cheeseburger Pie: 

  • Leftovers can be stored in the fridge in an air-tight container for 2-3 days. The leftovers are just as good as the day it is made. To reheat from the fridge, pop it in the oven at 350F for 15 minutes or even the air fryer for 10-12 minutes. 
  • You can freeze this dish. To reheat from frozen, let it thaw, then bake it in the oven at 350F for about 20 minutes.
  • You can make this dish and freeze it before baking if you like to keep oven-ready meals in your freezer. Prep it in aluminum pie dishes for easy storage and clean up. You could even make a few of these to “gift” to a new mom or family going through a hard time. They make great freezer meals.

    I made the bacon cheeseburger pie, I liked it husband thought it was to dry. He’s my tester for recipes cause he is not following a program but he has diabets & is loosing in his own way & I’ve lost 40 pounds so we are both eating healthier

I decided to use a can of diced tomatoes with green chillies, diced up dill pickles and I had a pie crust that I needed to use up so did that (prebaked) instead of the crescent rolls. I used Colby jack, pepper jack and sharp cheddar. My husband is looking forward to eating dinner..did not do the weight watcher directions bc I just got out of the hospital and need the calories.
