Instructions:
Begin by seasoning the ground turkey breast with salt, pepper, garlic, and taco seasoning. Let it marinate for at least 30 minutes.
In a large skillet, heat olive oil over medium heat. Add the diced red onion and cook until translucent and fragrant, about 3-4 minutes.
Add the marinated ground turkey to the skillet with the onion and cook, breaking up the meat with a wooden spoon, until fully cooked and golden brown, about 6-8 minutes. Ensure the turkey is thoroughly cooked before removing from heat.
Meanwhile, prepare the taco ingredients. Wash and dry the romaine lettuce leaves and place them on a large serving platter. Place the cottage cheese, corn kernels, diced red bell pepper, and diced tomatoes in individual bowls so each person can customize their own tacos.
Once the turkey filling is ready, remove the skillet from the heat and assemble the tacos. Take a romaine lettuce leaf and place a portion of the turkey filling in the center (if the taco filling is already cold).
