How to Make Weight Watchers Garlic Breadsticks

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper or foil.
  2. Combine the flour and Greek yogurt in a large bowl. Mix it by hand, kneading it in the bowl to incorporate the ingredients.
  3. Once a dough ball is mostly formed, some extra flour should be on the bottom of the bowl. Move the extra flour to a work surface and continue kneading the dough on the table. This extra flour will prevent it from sticking.

4. Knead the dough until smooth and all flour is incorporated, about 2- 4 minutes.

5. Divide the dough into 8 equal portions. Roll the portions into a breadstick shape; they will be long and thin strands. They may seem small, but they will puff up in the oven!

6. Allow the uncooked breadsticks to rest for 10 to 15 minutes while you work on the garlic butter.

7. Make the garlic butter in one of two ways. First, you can sauté the garlic and butter over medium heat on the stovetop to lightly brown the garlic and melt the butter, then use a pastry brush to spread the mixture on the breadsticks. The other option is to use a food processor, create a paste with the garlic and butter, and then apply it to the breadsticks.

  • Yogurt: If you only have full-fat Greek yogurt, it will surely work in this recipe, but you might need to slightly adjust the flour amount. However, both of these adjustments will increase the Weight Watchers points. Either way, make sure to use plain, unflavored yogurt.
  • Stuffed Breadsticks: Have some extra points to use up? You can stuff the breadstick dough with mozzarella or parmesan when rolling them out! You can also stuff them with olives or other ingredients.
  • Cheesy Breadsticks: Sprinkle on your favorite cheese just before baking. This will affect the WW points unless you use a small amount of fat-free cheese.

  • You only need to knead the dough for a few minutes until it is smooth. If you over-mix it, the breadsticks will be tough in consistency when you bite into them.
  • On the topic of overkneading, I also suggest mixing this dough by hand so you can feel its elasticity. If you use an electric mixer with a dough hook, it might be overkill and make the gluten strands in the flour tighten.
  • When working with dough, avoid adding extra flour to your work surface. Use up every bit of flour that you measure. This will help prevent the dough from sticking without the need to add additional flour, which could affect the WW points.
  • These breadsticks are best enjoyed warm, the same day that you make them. If you feel as though 8 breadsticks are too much for you or your family, you can cut the recipe in half to make less!
  • The dough was just slightly sticky when I rolled the breadsticks, but not so much that I couldn’t shape them. If you have used up every ounce of flour from the bowl and table, add just a pinch to your hands while rolling the breadsticks, and it should help you out!
