Brownie Cheesecake Bites are fun for kids

One batch makes 18 brownie cheesecake bites. 

You don’t have to worry about having to make a double batch, this one recipe makes plenty. With 18 in just one batch, you’ve got plenty to eat three a day and it’ll last you all week.

Ingredients you need to make Brownie Cheesecake Bites: 

  • ½ cup graham cracker crumbs
  • 1.5 tablespoons melted reduced-fat margarine
  • 6 oz softened light cream cheese
  • 2 tablespoons white sugar
  • ½ tablespoon all purpose white flour
  • ½ tablespoon heavy whipping cream 
  • 3 tablespoons egg whites (it’s easiest to use a carton of liquid egg whites)
  • ½ teaspoon vanilla extract

BROWNIE CHEESECAKE BITE TOPPING

  • 1 package of Special K Brownie Bites or 1 Fiber One 70 Calorie Brownie
  • 1 tablespoon mini white chocolate chips
  • 1 tablespoon mini milk chocolate chips
  • 1 tablespoon chopped pecans or walnuts

  1. Preheat the oven to 350F and fill your mini muffin pan with 18 liners.
  2. In a small bowl, mix the graham cracker crumbs and melted margarine together. Fill the 18 muffin cups with the crumb mixture and pat it down with your fingers.
  3. Bake in the oven for 4-5 minutes then set aside the muffin tin aside but leave the oven on.
  4. Using an electric mixer, blend the softened cream cheese and sugar together until well mixed. Add the all purpose flour, heavy cream, egg whites, and vanilla. Continue beating the mixture on low. Divide the cream cheese mixture over the 18 mini muffin cups – it’ll take about 1 tablespoon in each.
  5. Cut up the mini brownie bites (or fiber one brownie) and mix it in with the chocolate chips and chopped nuts. Sprinkle the chocolate nut mixtures on top of the 18 cheesecake bites.
  6. Bake them in the oven for 13-15 minutes. Let the bites cool then let them set in the fridge for about 1.5 hours. After setting, they are ready to eat.

  • If you use fat free cream cheese, it drops each cheesecake bite to two points. 
  • A Fiber One Brownie is 2 points, but using it doesn’t change the point value of the cheesecake bites versus using the Special K Brownie Bites package. 
  • You can use Lily’s No Sugar Added mini baking chips to help lower the sugar content if you prefer. It won’t change the points per bite, but it will lower the actual sugar content since Lily’s chocolate chips are made with stevia.

  • Liquid egg whites are easiest to use, but if you have to use actual egg whites, it helps to beat them with a fork first. It makes it easier to measure three tablespoons. 
  • These will keep well in the fridge for about 7 days. They also freeze very well, so feel free to store a few in the freezer for a later holiday.
