This Frozen Strawberry Torte is a wonderful holiday treat. 

The classic version uses cream–it’s delicious, but I wanted to try to make it a bit healthier.

So, I started experimenting a little with a version with no cream. 

 I came up with this weight loss-friendly Vegan Strawberry Torte recipe and it has quickly become a household favorite!

Strawberry Torte Ingredients

 

Ingredients for Frozen Strawberry Torte:

Crust:

  • 2 cups rolled oats
  • 1 cup raw walnuts
  •  2 cups fresh dates, pitted
  • 1/2 tsp ground cloves

Filling:

  • 2 medium frozen bananas, peeled and sliced
  • 2 medium fresh bananas, peeled and sliced 
  • 2 tbsp raw sunflower seeds
  •  2 tbsp coconut oil

Topping:

  •  2 cups frozen strawberries

Frozen Strawberry Torte

How to make Frozen Strawberry Torte (Step by Step):

  1. To make this Vegan Strawberry Torte, start by processing all ingredients for the crust/ (Blend until a sticky mixture has formed). Press the crust into an 8-inch springform pan and place it in your freezer to set it while you are making the filling.
  2. Meanwhile, blend all ingredients for the filling until creamy, uniform, and smooth. Pour 1/2 of the filling mixture over the crust, and return it to the freezer.
  3. Add 1/2 of the frozen strawberries to the remaining 1/2 of the filling mixture and blend again until smooth. Pour the mixture over the filling, and smooth it out using a silicone spatula.
  4. Arrange the remaining strawberries on top of your cake and place the cake in the freezer for about 4 hours, until completely set.
  5. Garnish with fresh strawberries, if desired.
  6. Keep this Vegan Strawberry Torte in your freezer for up to 2 months.

Vegan Strawberry Torte Variations/Substitutions

  One of the key ingredients in this Frozen Strawberry Torte is ground walnuts, which is a great low-carb and gluten-free alternative to traditional wheat flour and trans fats. Ground walnuts are also high in protein and healthy fats, making this cake a more satiating option that can help keep you feeling full for longer. Good alternatives also include almonds, hazelnuts, and macadamia nuts.

  •  As for the sweetener, my recipe uses fresh dates instead of traditional white sugar; this means fresh dates won’t cause a spike in blood sugar levels and can help regulate energy levels throughout the day. You can also replace dates with dried figs or raisins, but keep in mind that only fresh fruit is ZeroPoint food!
  • You’ll need only 20 minutes to make this Healthy Dessert! For an even easier recipe, skip step 3 and use whole strawberries for the topping. 

 Tips and Tricks for Making Vegan Strawberry Torte

  •   Use high-quality ingredients. Since this is a raw dessert, using fresh and high-quality ingredients is crucial. Choose ripe and juicy strawberries, and use organic and unprocessed ingredients whenever possible.
  • To make the crust, process the nuts and dates in a food processor until they form a crumbly mixture, and then add melted coconut oil and pulse until everything is well incorporated.
  • Use a ring mold to shape the torte and press the crust mixture down firmly. It is important since the crust will “hold” your cake!
  • You can experiment with different flavors and ingredients to create your unique version of Frozen Strawberry Torte. For example, you could add some lemon zest or coconut flakes to the crust, or mix in some cacao powder to the filling for a chocolatey twist.

  1. Sorry, I just went back and read the entire posting and saw where it was noted the seeds go into the tort.

  2. Hi, when you say to blend the ingredients do you mean by using a hand mixer? I’m sure this seems like a silly question but I’ve never used these ingredients in baking & I want to make sure I do it correctly. I’m going to make this for my bosses 60th birthday.

    1. Hi Sandy:

      You’ll want to use a blender (ideally a high speed blender like a vitamix) or a food processor to blend the filling. A mixer won’t pulverize and incorporate the seeds.

      If you don’t have a high speed blender and your blender won’t turn you could try adding a little milk (use a non dairy milk if you want to keep it vegan) to help the blender turn.
