These strawberry chocolate chip bars are what happens when a cookie and a fruit bar decide to collaborate, and the result is absolutely worth making. A soft, chewy base is studded with chocolate chips and swirled with fresh strawberry sweetness — each bar is different and every bite is better than the last. They’re easy enough for a weeknight bake but impressive enough to bring to a potluck or bake sale. Cut them into squares, dust with a little powdered sugar, and watch them disappear.

  • Swap: Use frozen strawberries (thawed and drained well) when fresh aren’t available — they work just as well in the batter.
  • Make-ahead: Bake and cool completely, then wrap tightly and store; bars actually improve in texture on day two.
  • Storage: Store in an airtight container at room temperature for 3 days or refrigerate for up to 5 days.
  • Variation: Add a swirl of strawberry jam on top before baking for extra fruit flavor and a pretty marbled look.
  • Serving: Serve warm with a small scoop of vanilla frozen yogurt or slice thin and stack on a dessert platter.

Ok… I confess.. I am in love with these bars! 🙂 I had one right out of the oven. 🙂 Thankfully everyone else loved them too or I might of eaten them all!! They are full of strawberries and just enough chocolate to cure that “I need chocolate” attack. Only 5 smart points each and they make a delicious and satisfying dessert.

Strawberry chocolate chip bars

Ingredients 

  • 1/3 cup white sugar
  • 2 Tbsp strawberry greek yogurt, plain or vanilla will work too
  • 2 Tbsp apple sauce
  • 1 egg
  • 1/3 cup almond milk
  • 1 tsp vanilla
  • 1-1/4 cup white flour
  • 1 tsp baking powder
  • 1 cup sliced fresh strawberries
  • 3 Tbsp mini chocolate chips

Instructions 

  • Preheat oven to 350F, spray a 9 inch square dish and set aside.
  • Using an electric mixer beat your sugar, yogurt and apple sauce. Add in your egg, milk and vanilla and mix well.
  • Stir in your flour and baking powder. Gently fold in your strawberries and chocolate chips.
  • Spread out batter into your sprayed dish.
  • Bake in oven for approx 35 minutes. Cool and cut into 12 bars, each bar is 5sp or 3pp.
