Faced with this obstacle, I decided to pivot and use the butterscotch chips I had on hand, leading to the creation of a Snickerdoodle Butterscotch Bread that promised to be even more delectable than the original concept.
The result was nothing short of perfection. This loaf bakes beautifully, rising to impressive heights that might initially cause alarm but ultimately deliver an abundance of deliciousness. Ingredients you need to make Snickerdoodle Butterscotch Bread:
- 3 eggs
- 1/3 cup brown sugar
- 1/2 cup unsweetened apple sauce
- 1/3 cup nonfat plain Greek yogurt
- 1 tsp vanilla
- 1 3/4 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1/4 cup butterscotch chips
TOPPING
- 1 tsp sugar
- 1/2 tsp cinnamon
How to make Snickerdoodle Butterscotch Bread (step by step):
- Preheat the oven to 350F and spray a regular sized loaf pan with nonstick cooking spray.
- In a large bowl, whisk the eggs and add in brown sugar. Mix in the applesauce, yogurt and vanilla and stir well.
- Add the flour, baking powder, baking soda, 2 tsp cinnamon and mix well.
- Chop up the butterscotch chips so they will be more evenly spread. In a small zip lock bag, shake chips with a pinch of cinnamon.
- Fold the chips into the batter (it will be thick). Spoon the batter into the loaf pan. In a small bowl mix 1 tsp of sugar and 1/2 tsp cinnamon together and sprinkle evenly on top of batter.
- Bake the loaf in the oven for 45 minutes or until baked through.
- Let the loaf cool completely before removing it from the pan. Cut it into 10 servings and enjoy!

Different ways to change up this recipe:
- If you can find cinnamon chips, feel free to replace the butterscotch chips for them. Or use whatever sounds good to you!
- Use Lily’s No sugar butterscotch bakin chips to reduce the sugar amount. It won’t affect the taste.
