Ingredients you need to make Million Dollar Chicken Casserole: 

  • 7.5 oz package of biscuits (The Walmart Great Value brand has a pack of 4 cans, 10 biscuits each in the roll. These cans are 7.5 oz. If you need to buy a bigger can, just weigh out 7.5 oz of dough.) 
  • 4 oz softened light cream cheese
  • 8 oz of cooked shredded chicken (about 2 cups)
  • 1/3 cup light sour cream
  • 1/4 cup light ranch dressing or Zero Point Ranch
  • 5 slices cooked and crumbled Oscar Mayer Original center cut bacon 
  • 1/2 cup reduced fat shredded cheese 
  • 4 tsp Everything but the Bagel seasoning

How to make Million Dollar Chicken Casserole (step by step): 

  1. Preheat oven to 375F and spray a 9×13 casserole dish with some cooking spray.
  2. Cut each of the 10 biscuits into 6 pieces each and spread across bottom of the sprayed dish.
  3. In a bowl, mix the cream cheese, sour cream, ranch dressing and chicken together with a handmixer and add in 2 tsp of everything but the bagel seasoning.
  4. Stir well and spoon on to your biscuits making sure it’s spread evenly.
  5. Sprinkle another 1 tsp of the everything but the bagel seasoning on top.
  6. Bake in the oven for 30 minutes, remove from oven and sprinkle the cheese, crumbled cooked bacon and the final 1 tsp of seasoning on top and return to the oven for 10 more minutes.
  7. Let cool for 5 minutes before digging in. Enjoy!

Different ways to change up this recipe: 

  • Use Zero Point Ranch dressing instead of the light ranch. It’ll make each serving 8 points instead of 9 points. 
  • You can use non-fat Greek yogurt instead of sour cream to lower the points. It will taste the same. 
  • If you don’t like Everything but the Bagel seasoning, you’re welcome to use whatever seasoning you like. Dill would be a great choice – it will really enhance the ranch flavor. 
  • You can use turkey bacon instead of regular bacon if you’d like. It’s personal preference. 
  • If you’re not a fan of chicken, you can substitute extra lean ground beef or lean ground turkey. 

Tips and Tricks for Making Million Dollar Chicken Casserole: 

  • This is a great freeze ahead meal. Bake a few batches of this recipe in alumnum pans, wrap well and store in the freezer for up to 6 months. You can give them away as gifts to new moms, or for someone going through a hard time. To reheat yourself, pull one out the night before and let it thaw in the fridge. When you’re ready for dinner, bake the casserole for about 30 minutes or until heated through. 
  • You can bake this a day ahead of time. Just follow the directions up until step 6, but don’t bake it the last 10 minutes. Sprinkle with the cheese and seasoning, cover it with saran warp and refrigerate until you’re ready to bake. The next day, let the casserole come to room temperature while the oven is pre-heating. Bake for 20 minutes, until it’s heated through. 
  • Use shredded rotisserie chicken to save time, rather than cooking the chicken yourself. Costco has a delicious pack of pre-shredded, rotisserie chicken that works great in this dish. If you’re using a full rotisserie chicken, make sure to use only the chicken breast so that it doesn’t add points.

  1. I made this last night for me and my 7yo son. It was sooo good… I didn’t put the extra tsp of everything but the bagel seasoning, since my kid is picky.

    Much to my surprise, he cleared his plate clean!!!!! I’m definitely making this again, and I’m looking forward to leftovers tonight.

  3. Let me start by saying the flavor of this is so yummy, however I did find it sort of dry and mine was darker then pictured at 30 mins cooked uncovered. When I make it again I will try covering it for the first 30 mins and then only leaving it uncovered for the last 10 mins. Still delicious!

  4. Wondering if anyone has tried freezing this (after baking)? I love recipes that I can make and freeze in individual servings for future lunches – but concerned that the biscuits might get soggy. Any attempts?

    1. Hi Linda I typically never have leftovers long as my hubby takes to work but I have seen many say the bubble ups freeze very well 🙂
