Chocolate chip zucchini loaf

July 17, 2015

I had a request from a follower on my Facebook who was looking for a chocolate zucchini loaf. I will admit, I am not a zucchini fan because…well my relationship with veggies is not very good! ๐Ÿ˜‰ I have been told though that you can’t even taste the zucchini and I though ok, I am up for the challenge.. It also gave me a reason for a nice long walk to the local farmer’s market to pick up some zucchini. ๐Ÿ™‚ Well to my surprise I loved this loaf, it is easy to make and yields 10 generous pieces at 5 smart points each.

    Hi Kate,
I was wondering if you think I could make this into muffins instead of a loaf?

Hi Becky.. sure I don’t see why not ๐Ÿ™‚ If you make 10 they will be 3pp each and should be decent sized muffins

Hi Kate. I made this and subbed 1/3 cup of the flour for cacao powder. It’s double chocolate now! Yum. Can’t wait to try it. Just came out of the oven and looks great!
