  • 1 chopped garlic clove
  • 2 chopped green chilies, (about 30g).
  • 1 tablespoon of olive oil
  • 3 medium boneless, skinless chicken breast, cooked and shredded
  • 1-2 cans of white beans (or about 400 grams of beans if you are making your own)* 
  • 2 cups of reduced-sodium chicken broth
  • 1 cup of fat free skim milk
  • 1 teaspoon of cumin
  • 1/2 teaspoon of dried oregano
  • 1 teaspoon ground coriander
  • 1/4 teaspoon of ground black pepper
  • Salt to taste

*Any white beans will do great, so feel free to use cannellini beans, navy beans, or great northern beans.

  3. Add the cooked shredded chicken, white beans, chicken broth, skim milk. Stir occasionally.
  4. Cook over low heat for 20-30 minutes, stirring occasionally, until the soup is hot and thick. Add salt to taste. Serve hot and enjoy.

Variations and substitutions
