  • 1 fresh rosemary sprig, leaves picked and chopped
  • 1 bay leaf
  • 2 garlic cloves, chopped 
  • 4 Swiss chard leaves
  • 1 (14.5-ounce) can of tomatoes, chopped 
  • 2 cups garbanzo beans, canned or boiled
  • 2 tbsp fresh parsley, chopped 
  • 1/2 tsp ground black pepper 
  • 1 tsp red pepper flakes 
  • Himalayan salt, to taste 

 

How to make Vegan Garbanzo Bean Soup (step by step): 

  1. Heat olive oil in a large soup pot over medium-high heat. Now, sauté the onion for about 3 minutes, until translucent. 
  2. Then, cook the carrots, celery, bell pepper, rosemary sprig, and bay leaf for about 4 minutes more, adding a few tablespoons of water to prevent food from burning. 
  3. Add garlic and continue sautéing for 1 minute more, until aromatic. Add Swiss chard leaves and canned tomatoes to the pot. Pour in 2 cups of water (or vegetable broth if you prefer) and let it cook for 15 minutes more.
