Chicken and Dumplings is a classic comfort food dish, and today I wanted to try a different spin on the traditional dish. Below you will find my delicious Vegan and Chicken Dumplings recipe. 

It is a healthy hearty meal (and tastes amazing!)

With only 9 WW Points, this Vegan Chicken and Dumplings is also a Weight Watchers-friendly dish!

One of the key components of Chicken and Dumplings is, of course, the chicken. My recipe for Vegan Chicken and Dumplings calls for soy curls. These products can be found at most grocery stores and offer a similar texture and flavor to chicken! 

I used my homemade poultry spice mix to take this vegan chicken up a notch! For the dumplings, the recipe calls for an old-fashioned Vegan Dumpling Dough.

Vegan Chicken and Dumplings Recipe

Ingredients in Vegan Chicken and Dumplings:

Ingredients for homemade vegan chicken and dumplings on white counter

Vegan Chicken:

  • 1 cup soy curls
  • 1 tbsp poultry seasoning mix

Note: For a homemade poultry seasoning mix, combine 1/4 tsp of dried ground sage, 1/2 tsp of dried ground coriander seeds, 1/4 tsp of ground cumin seeds, 1/2 tsp of dried ground marjoram, 1/4 tsp of ground black pepper, 1/2 tsp of dried ground bay leaf, and a pinch of grated nutmeg.

Chicken Soup:

  • 1 tbsp olive oil
  • 1 spring onion, chopped
  •  2 medium carrots, peeled and sliced
  • 1/2 small celery root, peeled and chopped
  • 1 tbsp all-purpose flour
  •  4-5 wild garlic leaves, roughly chopped (optional)
  • 1/4 cup vegan heavy cream
  • 1 sprig rosemary (optional)
  •  Himalayan salt and mixed peppercorns, to taste
  • 1 tablespoon fresh parsley, roughly chopped

Dumplings:

  •  1 cup semolina flour
  • 2 tbsp all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 tsp salt
  • Ground mixed peppercorns, to taste
  •  1/4 tsp turmeric powder 
  • 2 tbsp olive oil
  •  1 cup water

 

How to Make Vegan Chicken and Dumplings (Step by Step):

  1. Rehydrate soy curls: Let the soy curls sit for about 10 minutes in hot water; drain the soy curls and rub the poultry spice mix onto them.
  2. In a large pot, heat the olive oil over medium flame. Once hot sauté spring onion, carrots, and celery for about 5 minutes, until the vegetables have softened.
  3. Add the flour and stir into the vegetables. Slowly pour in 4 cups of water, wild garlic, vegan heavy cream, rosemary, and parsley; bring to a rolling boil, and then immediately lower the heat.
  4. Let the soup simmer for about 10 minutes. Taste, and then, add salt and pepper.
  5. In the meantime, prepare the Vegan Dumpling Dough. In a large bowl, stir together the semolina flour, all-purpose flour, baking powder, salt, pepper, and turmeric powder. Pour in the olive oil and water.
  6. Stir until everything is well incorporated. Next, scoop the dough using an ice-cream maker (or a tablespoon) and gently drop them into the simmering soup.
  7. Let your soup simmer, covered for 15 to 20 minutes, until all dumplings are thoroughly cooked.
  8. Garnish your soup with parsley and serve hot. Bon appétit!

Vegan Chicken and Dumplings Variations/Substitutions

  •  There are several plant-based alternatives to chicken that work well in this Vegan Chicken and Dumplings. You can simply cut the tofu or tempeh into bite-sized pieces and add it to the dish in the same way you would add soy curls. Seitan, also known as wheat meat, is made from wheat gluten and has a meaty texture that is similar to soy curls. Mushrooms have a meaty texture and can add a lot of flavor to this dish. Try adding a variety of mushrooms, such as shiitake, portobello, or cremini.
  •  Adding the poultry spice mix is a wonderful way to boost the flavor of a vegan chicken. I used my homemade mix, which consists of ground sage, coriander seeds, cumin seeds, marjoram, nutmeg, black pepper, and bay leaf. You can experiment with your favorite spices. Great alternatives also include dried basil, rosemary, thyme, and chili flakes; for a smoky flavor of vegan chicken, you can add smoked paprika or smoked salt.
  • This recipe for dumplings is simple yet delicious! As for dry ingredients, many recipes call for all-purpose flour but I prefer semolina flour. However, if you tried using all-purpose flour only, write in the comments below, I’m really interested in how it worked out for you. As for liquid ingredients, you can use plant-based milk instead of water, and vegan butter instead of olive oil.

 

Tips and Tricks for Making Vegan Chicken and Dumplings

 

Choose the right vegan chicken substitute. There are many options for vegan chicken but choose a substitute that has a similar texture to chicken and that will hold up well in the soup.

Add plenty of vegetables. Vegetables not only add nutrients but also flavor and texture to the dish. Carrots, celery, onions, and potatoes are classic choices for chicken and dumplings, but you can also add green peas, bell peppers, or corn.

Make fluffy dumplings: To make light and fluffy dumplings, use a mix of flour, baking powder, and salt. To cook your dumplings to perfection, drop them into the simmering soup, cover the pot, and let them cook for approximately 15 to 20 minutes.
