Seitan Wings:

  • 1 cup vital wheat gluten
  • 2 tbsp nutritional yeast 
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper, preferably freshly ground 
  • 1 tsp poultry seasoning mix (use your favorite store bought or look below for homemade recipe)
  • 1 cup vegetable broth
  • 1 tbsp tahini 
  • 1 tsp olive oil 

Vegan Buffalo Sauce:

  • 1/2 cup hot sauce
  • 2 tsp soy sauce
  • 2 tsp apple cider vinegar
  • 2 tbsp vegan unsalted butter
  • 1 tbsp agave syrup

How to make homemade poultry seasoning mix:

For a homemade poultry seasoning mix, combine 1/4 tsp of dried ground sage, 1/2 tsp of dried ground coriander seeds, 1/4 tsp of ground cumin seeds, 1/2 tsp of dried ground marjoram, 1/4 tsp of ground black pepper, 1/2 tsp of dried ground bay leaf, and a pinch of grated nutmeg.

How to make vegan buffalo wings (step by step): 

  1. In a large mixing bowl, whisk together the vital wheat gluten, nutritional yeast, garlic powder, paprika, black pepper, and poultry seasoning mix.
  2. Add the broth and tahini to the dry mixture and stir with a rubber spatula until a dough ball forms. 
  3. After that, knead the dough with your hands. (If the dough seems too dry, add more vegetable broth, 1 tablespoon at a time). 
  4. Form the dough into nugget shapes (about 2 inches). 
  5. Bring a large pot of water to a boil (I added about 5 cups of water). Add the seitan wings and reduce the heat to medium. Let them cook for 40 to 45 minutes.
  6. In the meantime, simmer all the buffalo sauce ingredients in a saucepan over medium heat. Stir until everything is well combined, and remove from the heat.
  7. Once the seitan wings are cooked, place them on paper towels to remove excess water. Drizzle 1 tsp of olive oil over seitan wings and place them in the Air Fryer cooking basket. 
  8. Air fry the prepared seitan wings for about 10 minutes, until golden color. Pour hot Vegan Buffalo Sauce over the seitan wings to coat them on all sides. Serve and enjoy!

  • For this recipe, I prefer frying to baking in the oven. Buffalo seitan wings are traditionally deep-fried to achieve a crispy texture. However, you can cook them in your Air Fryer to achieve the best results with minimal oil. If you do not have an Air Fryer, I recommend frying them in a nonstick or grill pan. 
  • Serve immediately! Buffalo Seitan Wings are best served immediately after cooking to maintain their crispy texture. If you need to keep them warm before serving, place them on a wire rack in a 200 degrees F oven to prevent them from getting soggy. For an Air Fryer, you can use the “Keep Warm” function. Enjoy!
