Why you should try This Buffalo Seitan Wings Recipe

  • A healthy alternative: Not only are Vegan Buffalo Wings delicious and satisfying, but they are also a great source of plant-based protein. Seitan is high in protein and low in fat, making it a great option for those who are looking to add more plant-based protein to their diet. While seitan can be a healthy and nutritious addition to a balanced diet, its impact on weight loss depends on how it is prepared and consumed. Seitan can be high in calories if prepared with added fats and oils or if consumed in large quantities. It means that seitan can be a part of a healthy weight loss diet, but it should be consumed in moderation and prepared in a low-calorie manner. These Buffalo Seitan Wings are air-fried with a few drizzles of oil to keep you full and satisfied longer! I also used only 2 tablespoons of vegan unsalted butter for the iconic Buffalo Sauce.
  • Taste: Buffalo Seitan Wings have an incredible taste! They can be seasoned and cooked in various ways, allowing for a wide range of flavor options. With their meat-like characteristics and chewiness, they can also have a similar texture to chicken wings, making them a satisfying alternative.
  • Versatility: One of the best things about Buffalo Seitan Wings is that they are versatile. You can adjust the heat level of the sauce to your liking by using more or less hot sauce, or you can experiment with different spice blends to create your unique flavor profile. Your taste buds (and your health) will thank you!

Ingredients for Vegan Buffalo Wings

Seitan Wings:

  • 1 cup vital wheat gluten
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper, preferably freshly ground
  • 1 tsp poultry seasoning mix (use your favorite store bought or look below for homemade recipe)
  • 1 cup vegetable broth
  • 1 tbsp tahini
  • 1 tsp olive oil

Vegan Buffalo Sauce:

  • 1/2 cup hot sauce
  • 2 tsp soy sauce
  • 2 tsp apple cider vinegar
  • 2 tbsp vegan unsalted butter
  • 1 tbsp agave syrup

How to make homemade poultry seasoning mix:

For a homemade poultry seasoning mix, combine 1/4 tsp of dried ground sage, 1/2 tsp of dried ground coriander seeds, 1/4 tsp of ground cumin seeds, 1/2 tsp of dried ground marjoram, 1/4 tsp of ground black pepper, 1/2 tsp of dried ground bay leaf, and a pinch of grated nutmeg.

How to make vegan buffalo wings (step by step):

  1. In a large mixing bowl, whisk together the vital wheat gluten, nutritional yeast, garlic powder, paprika, black pepper, and poultry seasoning mix.
  2. Add the broth and tahini to the dry mixture and stir with a rubber spatula until a dough ball forms.
  3. After that, knead the dough with your hands. (If the dough seems too dry, add more vegetable broth, 1 tablespoon at a time).
  4. Form the dough into nugget shapes (about 2 inches).
  5. Bring a large pot of water to a boil (I added about 5 cups of water). Add the seitan wings and reduce the heat to medium. Let them cook for 40 to 45 minutes.
  6. In the meantime, simmer all the buffalo sauce ingredients in a saucepan over medium heat. Stir until everything is well combined, and remove from the heat.
  7. Once the seitan wings are cooked, place them on paper towels to remove excess water. Drizzle 1 tsp of olive oil over seitan wings and place them in the Air Fryer cooking basket.
  8. Air fry the prepared seitan wings for about 10 minutes, until golden color. Pour hot Vegan Buffalo Sauce over the seitan wings to coat them on all sides. Serve and enjoy!

Buffalo Seitan Wings Variations/Substitutions

  • Seitan Wings: Seitan is a protein-rich, wheat-based meat substitute that is commonly used as the base for Buffalo Seitan Wings. However, if you have a gluten allergy or sensitivity, you can substitute seitan with other meat alternatives such as soy curls, tempeh, or tofu.
    • Sauce Variation: The classic Buffalo sauce is made with hot sauce and butter. But you can experiment with different sauces to suit your taste preferences. For example, you can try barbecue sauce, sweet chili sauce, or teriyaki sauce to give your wings a different flavor.
    • Spice Level: Adjust the spice level of your wings by using different types of hot sauce or your homemade ones. You can also mix in other spices as garlic powder, paprika, or cumin to give your wings a different flavor profile.
    • Cooking Method: Buffalo Seitan Wings can be cooked in many ways, including frying, baking, or air-frying. Air frying will give your wings a crispy texture without adding unnecessary calories.

Tips and Tricks for Making Buffalo Seitan Wings

  • Seitan is the key ingredient in buffalo seitan wings, so it’s important to use a high-quality brand or make your own. The texture should be firm and chewy and it should be well-seasoned to add flavor to the dish. To make your Buffalo Seitan Wings look and feel like traditional wings, cut the seitan into small, wing-shaped pieces.
  • For this recipe, I prefer frying to baking in the oven. Buffalo seitan wings are traditionally deep-fried to achieve a crispy texture. However, you can cook them in your Air Fryer to achieve the best results with minimal oil. If you do not have an Air Fryer, I recommend frying them in a nonstick or grill pan.
  • Serve immediately! Buffalo Seitan Wings are best served immediately after cooking to maintain their crispy texture. If you need to keep them warm before serving, place them on a wire rack in a 200 degrees F oven to prevent them from getting soggy. For an Air Fryer, you can use the “Keep Warm” function. Enjoy!
