My taco fiesta bubble-up casserole dish is one of my most popular recipes, it is packed with so much deliciousness, a meal the whole family can enjoy.
Looking for a tasty casserole dish, try my popular taco fiesta bubble-up casserole. I’m so excited fall is on the way and I can spend some time playing around in the kitchen and creating new casseroles. This layered taco bubble-up is simply put…delicious!! 🙂 A bubble-up dish is a term given to the biscuit dough that bakes up and “bubbles” into the dish so to speak.
This recipe makes 6 generous servings at 254 calories per serving, 8 points if you are following WW. This is sure to be a family favorite, it is at my house. Leftovers are equally delicious if not better haha.

What kind of biscuits do you use for this casserole?
I first created this recipe when I would cross the border into the U.S. for groceries and buy the great value biscuits at Walmart. They used to sell a 4-pack bundle of small biscuit tubes, 10 biscuits, 7.5oz per package. These have since become hard to find. I think Aldi might sell their own brand as I have seen others post them. If you are in Canada like me you can buy the Pillsbury country tea biscuits. These are larger biscuits though so what I do is weigh out 7.5oz, I think it is 6-7 biscuits. Then you need to ensure you have enough small pieces to spread through the dish. I cut each biscuit open so I have two halves, then each half into 6 pieces. This should give you enough pieces of dough for the recipe.
Some people mention that some of the biscuits don’t bake all the way through. I never struggle with this so I wonder if it comes down to different oven temperatures. If this happens then you can prebake the dough pieces for 5 minutes.
I love using a 3 cheese blend in this recipe, however, any cheese will work and be just as delicious. Be sure to spread the cheese evenly so you can enjoy it in every bite.
Can I use something other than ground beef in this dish?
If you are looking to lighten up the recipe a little you can swap out the ground beef for ground chicken or turkey. This will lower the overall calories and if you follow WW then it will lower the points per serving. I have a lot of followers telling me they use ground turkey in this dish and love it.
Another ingredient people have shared with me that they added was beans, you can bulk up the dish by adding some black beans.
I have had others share that they made the dish without the biscuits, to keep the carbs low and it can be a keto-friendly recipe. You could also replace the biscuits with rice, granted it won’t be a low-carb meal but I am sure it will be delicious.

Notes
Storing and re-heating…
I cut it into 6 equal-sized servings. Optional to top it will a little dollop of sour cream. I like adding a little franks hot sauce as I am all for the spice.
Leftovers can be stored in an air-tight container in the fridge for 1-2 days, you can also freeze this dish either before or after baking. If you like to prep meals to add to the freezer and then bake when ready this dish will work for that.
Please feel free to share your reviews in the comments below, I love to hear from everyone. I hope you and your family enjoy this dish as much as we do.

Can you use the pillsburt crescent rolls instead of the biscuits?
I have honestly never used them for a bubble up so I can’t say for sure but I think they would work
Made this last night! Turned out great!
So glad you enjoyed it 🙂
The biscuits didn’t bake at all. They were the same size and really doughy. I am assuming that the biscuits are supposed to bake through, right?
Yes they are, all I can say is it might be your oven, ovens can vary so much, you can try pre baking the biscuits first for 5-10 minutes.. Sorry I never have an issue with the biscuits baking
Oh my goodness! That was delicious!! Definitely a keeper! Thanks for the recipe!!
Glad you enjoyed it Susan 🙂
First of all, i love your receipes. I made this receipe, its delicious. Are you sure the points/calories are correct? I added up the calories for 1/6 of the 9* 13 and came up with 764 calories. The biscuits alone are 1900 cals. Maybe i was a little generous with the receip ingrediets??
Hi Sandra, are you sure your using the right size biscuits? Mine are 7.5oz package with 10 small biscuits in the pack, the whole package is 17SP, I know someone else was using the wrong size and had her biscuits alone at 35 SP, that would be my guess in your calculations
Just found your website… thank you.. your recipe is geared to what my other half eats 99% of the time, so makes it WW friendly for me. Can’t wait to try it.
Hi Lynn, that’s awesome, I hope you both enjoy the recipes 🙂
Hi how do smart points change if I use ground turkey? Not a fan of the beef. Looks delicious though!
Hi Jess, I never cooked with Turkey as I don’t like it, maybe the WW App can help you better , compare the points for both in there and you might get an idea as to if it will bring down the SP value, my guess is it really wont change it that much
This was my first recipe of yours and it did not disappoint! So yummy.
I am so glad you enjoyed it 🙂
Oh my goodness…..made this for dinner tonight. It is amazing. I honestly can not believe it is 7sp for one serving. I divided it up in 6 equal portions….so suprised how large a portion was. I lost a great deal of weight on weight watchers a few years back. Have managed to stay within 5# now for seven years. But decided to start up again to loose the remaining 25 I should have done the first time around. This was my first bubble up…can’t wait to try the others!!! Thank you!!!!!
So glad you enjoyed it Kim, it is one of my favorites for sure, hope you love all the other bubble ups too 🙂
I have celiacs disease so can’t have biscuits. Do you suggest this with anything else instead of biscuits?
Hi, you can try rice, or pasta maybe??
I was wondering the same thing…. Do you think ripped up corn tortillas might be a good gluten free substitution for the biscuits?
Great idea!
