Ingredients:

Chicken fajita ingredients of raw chicken breast, onions, bell pepper strips, spices, and oil in separate dishes on a countertop.

For the Marinade:

  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 pinch of cinnamon
  • Zest of 1 lemon (about 1 tablespoon)
  • Juice of 1 lime (about 2 tablespoons)
  • 2 cloves garlic, crushed
  • ½ teaspoon black pepper
  • 1 teaspoon salt

For the Fajitas:

  • 2 boneless, skinless chicken breasts (600 g.)
  • 1 white onion, thinly sliced (150 g)
  • 1 red onion, thinly sliced (150 g)
  • 1 red bell pepper, thinly sliced (150 g)
  • 1 green bell pepper, thinly sliced (150 g)
  • 1 yellow bell pepper, thinly sliced (150 g)
  • 2 teaspoons vegetable oil

Instructions:

  1. Prepare the Marinade: In a medium bowl, combine oregano, cumin, smoked paprika, cinnamon, lemon zest, lime juice, crushed garlic, black pepper, and salt. Mix well to create a marinade.
  2. Marinate the Chicken: Slice the chicken breasts into thin strips. Add the chicken strips to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or up to overnight for more intense flavor.
  3. Prepare the Vegetables: While the chicken is marinating, thinly slice the white onion, red onion, and bell peppers. Set aside.
  4. Cook the Chicken: Heat 1 teaspoon of vegetable oil in a large skillet or grill pan over medium-high heat. Once hot, add the marinated chicken strips in a single layer. Cook the chicken for about 5-7 minutes, turning occasionally, until fully cooked and lightly charred. Remove the chicken from the pan and set aside.
  5. Cook the Vegetables: In the same skillet, add the remaining 1 teaspoon of vegetable oil. Add the sliced onions and bell peppers. Cook the vegetables for about 5-7 minutes, stirring frequently, until they are tender and slightly charred.
  6. Combine and Serve: Return the cooked chicken to the skillet with the vegetables. Stir to combine and cook for an additional 1-2 minutes to heat everything through. Serve the chicken fajitas hot, straight from the skillet, with warm tortillas on the side. You can also add toppings like salsa, guacamole, or sour cream.

Variations and Substitutions

  • Different meats: Swap out the chicken for beef or pork—or serve them with multiple proteins.
  • Vegetables: I usually stick to onions and bell peppers. You can add any veggies you like. Tomatoes, zucchini, mushrooms, or corn would work well.
  • Spices: Try adding coriander seeds, ancho chili powder, or taco seasoning to switch up the flavor and heat level.

Tips and Tricks for Making Chicken Fajitas

  1. Prepare Your Own Spice Mix: This not only gives your fajitas a unique touch but also allows you to enjoy a new flavor with just a few ingredient tweaks.
  2. Marinate the Chicken: This is crucial. Let the chicken marinate for at least an hour so the meat absorbs all the flavors.
  3. Heat the Pan Properly: The pan should be so hot that it sizzles. If it isn’t, wait. The most important thing about fajitas is cooking them at very high heat.
  4. Use Colorful Bell Peppers and Onions: This slightly changes the flavor but greatly enhances the presentation.

Serving Suggestions

Serve the chicken fajitas hot, directly from the skillet, with warm tortillas on the side. You can also add toppings like salsa, guacamole, or sour cream. If you’re watching your points on Weight Watchers, opt for a small tortilla or enjoy the fajitas on a bed of lettuce.
