I’m so excited fall is on the way and I can spend some time playing around in the kitchen and creating new casseroles. This layered taco bubble-up is simply put…delicious!! 🙂 A bubble-up dish is a term given to the biscuit dough that bakes up and “bubbles” into the dish so to speak.

This recipe makes 6 generous servings at 254 calories per serving,  8  points if you are following WW. This is sure to be a family favorite, it is at my house. Leftovers are equally delicious if not better haha.

Weight Watchers Friendly Ingredients:

  • Extra-lean ground beef 12 points 
  • Pillsbury biscuits or equivalent 18 points
  • Taco seasoning 2 points
  • Salsa 0 points
  • Peppers 0 points
  • Onion 0 points
  • Shredded cheese 14 points
  • Green onion 0 points
  • Sour cream *optional

How to make Taco Fiesta Bubble Up Casserole (step by step): 

  1. Cook the ground beef in a pan on the stove, add the taco seasoning, and simmer for a few minutes.
  2. Preheat the oven to 350F, spray a 9×13 casserole dish with nonstick cooking spray and set aside.
  3. Mix the ground beef and salsa together in a bowl.
  4. Cut up the peppers and onion, and then cut the biscuits into 6 pieces each.
  5. Place half of the biscuit pieces in the bottom of the casserole dish, top with half of the meat mixture, half of the peppers and onions, and half of the cheese. Repeat layers and finish with the chopped green onion on top.
  6. Loosely cover with foil and bake in the oven for 35 minutes. Remove the foil and continue baking for 15 minutes. Let cool for 5 minutes then cut into 6 servings. Top with a spoon of fat free sour cream (optional)

What kind of biscuits do you use for this casserole?

I first created this recipe when I would cross the border into the U.S. for groceries and buy the great value biscuits at Walmart. They used to sell a 4-pack bundle of small biscuit tubes, 10 biscuits, 7.5oz per package. These have since become hard to find. I think Aldi might sell their own brand as I have seen others post them. If you are in Canada like me you can buy the Pillsbury country tea biscuits. These are larger biscuits though so what I do is weigh out 7.5oz, I think it is 6-7 biscuits. Then you need to ensure you have enough small pieces to spread through the dish. I cut each biscuit open so I have two halves, then each half into 6 pieces. This should give you enough pieces of dough for the recipe.

Some people mention that some of the biscuits don’t bake all the way through. I never struggle with this so I wonder if it comes down to different oven temperatures. If this happens then you can prebake the dough pieces for 5 minutes.

I love using a 3 cheese blend in this recipe, however, any cheese will work and be just as delicious. Be sure to spread the cheese evenly so you can enjoy it in every bite.

Can I use something other than ground beef in this dish?

If you are looking to lighten up the recipe a little you can swap out the ground beef for ground chicken or turkey. This will lower the overall calories and if you follow WW then it will lower the points per serving. I have a lot of followers telling me they use ground turkey in this dish and love it.

Another ingredient people have shared with me that they added was beans, you can bulk up the dish by adding some black beans.

I have had others share that they made the dish without the biscuits, to keep the carbs low and it can be a keto-friendly recipe. You could also replace the biscuits with rice, granted it won’t be a low-carb meal but I am sure it will be delicious.

Ingredients 

  • 1 lb cooked extra lean ground beef
  • 1 7.5 oz package pillsbury biscuits, (10 biscuits to the pack, the ones In the 4 value pack, if you can't find that size you can buy the bigger size and weigh it out)
  • 1 package Taco seasoning, 30g
  • 1 1/3 cup salsa
  • 2 cup diced peppers, I used red, orange and yellow
  • 1 cup diced onion, I used red onion
  • 1 cup reduced fat shredded cheese, I use a 3 cheese blend
  • Green onion
  • Fat free sour cream for topping, optional

Instructions 

  • Cook the ground beef in a pan on the stove, add the taco seasoning and simmer for a few minutes.
  • Preheat oven to 350F, spray a 9x13 casserole dish and set aside.
  • Mix the ground beef and salsa together in a bowl.
  • Cut up the peppers & onion, and then cut the biscuits into 6 pieces each.

Storing and re-heating…

I cut it into 6 equal-sized servings. Optional to top it will a little dollop of sour cream. I like adding a little franks hot sauce as I am all for the spice.

Leftovers can be stored in an air-tight container in the fridge for 1-2 days, you can also freeze this dish either before or after baking. If you like to prep meals to add to the freezer and then bake when ready this dish will work for that.

      1. I have calculated 2 times this recipe and the SP’s is wrong using the current Weight Watchers Canada App. I calculated using Ground Turkey meat 99% fat free which is 9 SP.
        I also calculated it using Ground Beef 99% fat free which is 11 SP not 7.
        Please correct the information as it makes a big difference overall for my dailies. Thanks it takes very good too!

Hi Linda, sorry but I do not have to correct anything as I have the numbers right on my end, please know I triple check everything and take figuring out the points very seriously, I use WW recipe builder, my fitness pal and do the math on paper, are you sure you are using the right biscuits?? My pack I buy (from the US) is a 7.5 oz pack with 10 small biscuits in it, the whole pack is 17SP, my 1 pound cooked extra lean ground beef is 15SP, and my cheese is 11SP, everything else in the recipe has no points, my App gives me a 7SP point value per serving, exactly as I have it listed .. I am not sure where you think I said the ground beef is 7 points??

I will have to look for those biscuits..The ones I added into the recipe builder are the Jr. golden layers flaky buttermilk & it came out to 34 points, 7 for taco seasoning & 10 for cheese & 8 for 96/4% ground beef. We just want our members to be getting the correct information. I always tell them to always enter the information in themselves to be sure.

          2. I agree, but I do state very clearly in my recipe which biscuits I use and in most cases I share a picture, so I am indeed giving the CORRECT information, if they use the wrong size biscuits there is not much I can really do about that

I used 96% beef (11 points) and Velveeta Shreds cheese ( 8 points) and yes, the biscuits you use are 17 points. mine ended up being only 6 points per piece of pure delciousness!! thank you for this (and many) fantastic recipes <3

          9. Hi Paula, yeah that is weird, that adds up to 44 points which at 6 servings would be 7, did you make sure your servings were set at 6?

        2. Are you calculating the points using raw or cooked ground meat. I used 95% fat free ground beef, raw and have also calculated using 93% fat free ground chicken, raw, and both times I come up with 7Sp.

        3. I just made the same mistake with the biscuits, they must be ‘large’, as they calculate at 34 points…. But we’re literally the ONLY ones I’ve been able to find. Now I know to only use half next time ?

        1. Hi Joan, nope.. you might be using the wrong size biscuits, the one I use is a small 7.5oz can, it comes in a 4 pack and I buy it at Walmart in the U.S, there is 10 small biscuits in the pack and the whole tube is 17SP.. my guess is that is where you are getting a higher point value

          1. actually, my Walmart here in Western PA sells just a single tube of the biscuits by Great Value – very tiny tube – 10 biscuits and only 48 cents! Everyone must be using the wrong biscuits.

          2. Yup, those are the right ones.. It is 99% of the time the reason why people are getting a higher point value and some get pretty aggressive about it lol, but those biscuits are indeed 17SP for the whole tube 🙂

      2. Trying this recipe for the first time. I noticed in your recipe you didn’t clear indicate that the biscuits were to be cut up into smaller pieces although your photo shows this. This could be why their biscuits were undercooked. You are right that the Canadian Pillsbury roll of biscuits is bigger than the 7.5 oz. I only used six out of the 10 biscuits in the roll as a result. This makes the recipe point calculation work out. Looking forward to tasting it!

      3. Okay so I just have to say that I have been dying to try this recipe for 2 weeks and I finally made it for dinner tonight… and omg…. sooooo good!!!! I had been reading the reviews on it and someone asked at one point about making it vegetarian which gave me the idea to add some beans to it so I also mixed in a can of fat free refried beans to the meat mixture. I also accidentally cut my first biscuit into 8 pieces so I went with it for the rest of them. So delish, and now I have lunch for a few days too! Definite winner!!!

          1. Hi Mary, it is the same, there was no change as there are no “zero” foods in it so the smart points listed is freestyle as well , remember freestyle still goes by smart points 😉

      1. Hi, I guess you could, I am not sure the final outcome as I have never cooked it that way and you’d have to build the recipe in the WW app to know the correct points, I think the ground beef is 15SP in total

    1. Any suggestions for a sauce that is not salsa or chunky ? What about a pizza sauce with spices added that would not have all the chunky salsa ingredient? Recipe looks so yummy but my family will not eat the peppers & onions

    Kate, are you using regular fat biscuits in this recipe? Not low fat? I couldn’t find the exact package you described so I bought Pillsbury grands and just cut them up and measured out 7.5 ounces of them. I used about 3.75 large biscuits in the end. My concern is that this is going to be too many points in biscuits and that maybe I’m making a version where each serving is more than 7 sp. Help!

    1. Hi, I have never seen low fat ones, only the crescent rolls I have bought in the reduced fat so what you bought is fine, if you weighed out 7.5 ounces your good 🙂
