Memorial Day will be here before you know it, bringing breezy, warm weather, plenty of fun time with the family, and spring and summer outdoor favorite foods to make it all the more memorable. If you’re anything like me, big family holidays with comforting food can be challenging. It’s hard to walk that line between making the most of the party and sticking to your diet goals. These thirteen Weight Watchers favorites let me savor classic Memorial Day dishes while staying on track with my points.

1. Weight Watchers Tortellini Salad
No Memorial Day is complete without a pasta salad; this three-point tortellini version certainly delivers. Decadent cheese-filled tortellini mingles with juicy, ripe cherry tomatoes, artichokes, briny black olives, and bright red onion and arugula for an inspired dish. A bit of light Italian dressing and salt and pepper tie the whole thing together nicely.

2. Chicken Kebabs
Fire up the grill for these guilt-free chicken kebabs with zero Weight Watchers points per serving. These party-ready skewers have alternating cubes of juicy marinated chicken breast, red onion, zucchini, and delicious red, yellow, and green bell peppers. The presentation is on point, and you’ll love the flavor combination. I like to serve mine with a few ripe tomato slices and cucumbers for extra veggies and taste.

3. Weight Watchers Friendly Mediterranean Crescent Ring
At five Weight Watchers points per serving, this bright and summery crescent ring features an array of warm Mediterranean flavors, like tangy reduced-fat feta cheese, artichoke hearts, and kalamata olives. A touch of pine nuts adds texture and elevates the dish, making it an excellent pick for the most sophisticated Memorial Day soirees. Plus, reduced-fat Pillsbury crescent rolls are a great shortcut ingredient and add a buttery flavor that goes so well with the more robust ingredients.

4. Weight Watchers Coconut Cream Pie
Nothing says summertime like a generous slice of ultra-satiny coconut cream pie. While bakery versions can seriously sabotage your diet, this version is only six Weight Watchers points per serving and will satisfy your coconut cream cravings to a tee! The trick is using smart swaps, like unsweetened applesauce, nonfat Greek yogurt, and sugar-free Jello vanilla pudding mix in the base, then crowning each luscious slice with fat-free whipped topping.

5. Simple Ceviche
Ceviche is one of my Memorial Day go-to foods, but you must eat it straight from the cooler to enjoy the chilled lime-marinated fish and vegetables. It’s also zero Weight Watchers’ points per serving, making it a flavorful win! Marinade diced hake filets in lime juice for 45 minutes in your refrigerator, then mix your fish with bell peppers, red onion, and seasonings. I like to use a mixture of bell peppers for a nice presentation, as they contrast spectacularly with the snowy hake filet.

6. Mini Corndog Muffins
If you have kids at your Memorial Day picnic, you have to make a batch of these mini corndog muffins. They’re incredibly simple to prepare, only cost two Weight Watchers points per serving, and invoke those classic state fair flavors all in the comfort of your own backyard. A simple, homemade cornmeal base and hot dogs of your choice are all you need. You can even make these muffins in advance and freeze them until it’s party time.

7. Chicken Burgers
Enjoy these juicy one-point burgers at your Memorial Day picnic, and have no problem fitting into your summer dresses. I love this recipe because it’s effortless and packed with flavorful spices, like paprika, for a lot of taste without a ton of calories. You’ll also need ground chicken, bread crumbs, a bit of chopped onion, olive oil, egg, and salt and pepper to taste. Then, just grill and enjoy!

8. Redrock Grilled Shrimp (Copycat)
I love a good copycat recipe as much as anyone, which is why this four-point riff on Longhorn Steakhouse’s classic dish is one of my favorites. It’s also super simple to put together with just a few ingredients, like jumbo shrimp, cayenne pepper, lime, garlic powder, and a little light barbecue sauce. I serve white and cauliflower rice on the side to keep the carb count low and sneak in some extra nutrients. The presentation is flawlessly elegant, and the combination of juicy shrimp and spices is always delicious.

9. Creamy Cucumber Salad
Crisp, cool cucumbers come into season between May and August, and this salad celebrates them to perfection for just one Weight Watchers point per serving. Featuring cucumbers, diced red onion, and a dressing made of fat-free sour cream, Greek yogurt, a touch of reduced-calorie mayonnaise, and a mixture of lemon juice and white vinegar, it’s a deeply nuanced dish that your guests will love. Top it off with freshly chopped dill, and you have the ideal summertime treat.

10. Roasted Poblano Salsa
This Memorial Day, skip the store-bought salsas and whip up your own zesty variety that tastes infinitely better than anything you’ll find at the store. Plus, it’s pretty easy to make, and the longer you let the flavors mingle, the better it is. You’ll need a few fresh tomatillos, poblano pepper, jalapeno, diced white onion, and a few garlic cloves. Give your salsa a zesty, citrusy kick with some fresh lime juice.

11. Parmesan Bacon Ranch Potato Salad
You won’t believe this cheesy, bacon-studded potato salad is only three Weight Watchers points per serving, but I cross my heart that it is. The secret is big, bold flavors with low-calorie counts, like zero-point Ranch dressing and Dijon mustard. Ultra-flavorful cheese like Parmesan goes a long way, and crispy cooked bacon takes the potato salad to the next level. I like to sprinkle a bit of green onion on the top of mine for a little freshness at the end.

12. Weight Watchers Lemon Cheesecake Bars
If you want a sunny way to finish your Memorial Day picnic on a sweet note, these lemon cheesecake bars are the way to go. They’re calorie-conscious and total crowd-pleasers at four Weight Watchers points per serving. With a low-fat graham cracker and unsweetened applesauce crust, and a decadent filling made of nonfat Greek yogurt, sugar-free Jell-O cheesecake pudding mix, and a bit of reduced-fat cream cheese, you get all of the flavors with none of the unwanted fat. Fresh lemon juice and lemon zest give these bars a cheery citrus finish.

13. Weight Watchers Coleslaw
Coleslaw is the ultimate Memorial Day side dish, but too often, it’s laden with high-calorie mayonnaise. This one-point version uses nonfat Greek yogurt in place of the traditional mayo, cutting down the calorie count substantially while still giving the dish its trademark creamy consistency. I like to use shortcut ingredients, like shredded coleslaw mix, to save a bit of time.
This Memorial Day, cash in on classic picnic fare without sacrificing your diet goals with these thirteen simple recipes that are bound to please everyone at your party!
The Parmesean bacon ranch potato salad sounds wonderful. I also want to try it with cauliflower instead of potatoes.
