Egg White Breakfast Cups

These breakfast cups with just the egg whites sprinkled with bacon, diced potato, onions and peppers are convenient, easy to whip up and so tasty. Great fresh but also great to make in batches and freeze, then heat them up when you need a quick breakfast option.

Mini Trail Mix Breakfast Muffins

This is one of the more hearty breakfast muffin treats I make. They are packed with oats, nuts, seeds and raisins (substitute cranberry if you like) and enjoy these 1 WW and just 33 calories muffins. These only take about 5 minutes to wrestle together and about 15 minutes in the oven.

Omelet Onion Rings

Onions make everything better and this recipe is a fun twist on a traditional omelet with the egg and veggies held together within a purple onion. They are super east to make and you can typically get 5 or 6 omelets for each purple onion cut. Just cut the onion, stir up an egg and toss in mushrooms, light cheese and bacon and you are ready to enjoy a delicious breakfast.

I always feel cheated when buying egg bites from a coffee shop and paying north of $5 for two eggs. They are too easy (and better) to make at home and for the same price you could make several egg bites at home. This recipe is very easy to prepare and again, make them in batches and freeze the leftovers for easy breakfasts later in the week.

For peanut butter lovers, these lovely chocolate mini muffins will give you your filling of peanut butter and they stay with you all morning and keep you satiated. If you are using an older WW system, these muffins are 1 personal point or 2 smart points per muffin or 1 WW point on the new system.

Skinny One Point Pancakes

Every breakfast list has to have pancakes and this 1-point flapjacks from No. 2 Pencil are delicious and just 40 calories. They are made with ripe bananas, Greek yogurt and egg whites and pack in 3 grams of protein and finish with a slight sweetness. Top them with your favorite fruit and enjoy this classic breakfast staple.

1 Point Weight Watchers Egg and Veggie Muffins

Similar to the egg bites, these egg and veggie muffins are packed with protein and you can eat to your hearts desire because 4 of these muffins will only cost 1 WW point. I like to sprinkle these with hot sauce or dabble some Greek yogurt mixed with a little squirt of lemon for an extra kick.
