These candied carrots are made with a combination of maple syrup and brown sugar, so they have a warm, comforting flavor. The sweetness is balanced by some orange zest, which brings brightness, and butter substitute, which brings richness.

- 2 ½ tbsp Pure maple syrup
- To taste, Kosher or table salt
- 2 tbsp Light butter substitute
- 1 tbsp Brown sugar (or sugar-free replacement)
- Optional: cornstarch slurry (refer to instructions)

- Peel and chop the carrots on a bias, ¼-inch – ½ inch thick.
- Transfer the carrots to the slow cooker and add the remaining ingredients (except the optional slurry).
3. Mix everything until well combined and cook the carrots on high for 1.5-3 hours. Cooking time will vary with each slow cooker; mine took about 1 hour and 45 minutes (or cook on low for 3-5 hours). Check on them occasionally to see if they are fork-tender.
4. Once done, the maple syrup mixture might be thin. If so, mix about 2 teaspoons of cornstarch with a tablespoon or so of water. Mix until smooth to form a paste, then add it to the slow cooker and stir. It should thicken the maple glaze within a minute.

Variations and Substitutions
- Candied Carrots with Honey: You can easily use honey instead of maple syrup. It will taste slightly different but still highlight the carrots’ natural sweetness.
- Candied Carrots with Pecans: After cooking, sprinkle on some toasted pecans for garnish to upgrade the presentation and give the dish some texture contrast.
- Using Baby Carrots: If you want to have an even quicker prep time, you can use baby carrots instead. They will need longer to cook, though, since they are larger than the chopped ones. I would estimate around 3 hours on high.
- Real Sugar vs. Substitute: since this recipe has so little sugar, it doesn’t necessarily save points to use a sugar substitute, so feel free to use either.

- How to Store: Store the carrots in an airtight container after they cool down. Keep them in the fridge for 3-5 days.
- If you wish, you can give the carrots a stir every so often, but I don’t believe it is necessary. I did mix mine just once after an hour of cooking.
