Cornflake chicken

I decided to put this one up on my blog.. I’ve been making it what seems like forever, for awhile it was the only way my daughter would eat chicken (she’s since branched out) anytime I post this yummy chicken on my Instagram it gets lots of attention.. It really is quite simple..just grab some cornflakes, egg whites and chicken and your good to go! You can get creative too and use different dressings or honey mustard to coat your chicken with first but just be mindful of points.

1SP blue & purple, 4SP green- 6PP per 5oz
  • Boneless skinless chicken breast, cut into strips
  • Cornflakes
  • Egg whites
  1. Preheat oven to 350F, line a baking sheet with parchment paper (I like to give mine a little spray too, with cooking spray)
  2. Cut your chicken into strips
  3. Crush up your cornflakes, I like to do it the old fashioned way, in a bag and crush down with a heavy glass, then pour them out onto a plate.
  4. Dip your chicken pieces into the egg whites and then coat them in the cornflakes. ⅓ cup of crushed cornflakes will coat 6oz of raw chicken, making a 5oz (cooked)serving 1 SP blue & purple or 4 SP green
  5. Bake in oven for approx 20-25 min, turning halfway..
  6. Serve with your favorite dipping sauce (points not incl)
  7. *Note-you can coat your chicken in some flour first, I just don't find it necessary..

    This is a really great recipe my family loves! Another delicious way to make it is to substitute the eggs for Dijon mustard– make it the exact same way just dip them in Dijon mustard before the corn flakes.. We had to change to this after my daughter was diagnosed with a severe egg allergy. I thought I’d share.

      Hi Annie, thank you, Yes I have heard others say they use mustard, I am not a mustard fan but sometimes use BBQ sauce.. That’s too bad about your daughter but at least it was caught before anything serious happened 🙂

      I’m pretty sure I listed the smart points, and it will depend on how much chicken you use

    Hi there, just to clarify, it is 1 smart point for 6 oz on freestyle? I found the points a little confusing. Can’t wait to try tonight, thanks!

      Yes, well depending how much cornflakes you use.. you don’t need much once crushed to cover 6oz

    We use lite Ranch dressing before using the crumbs. Add in paprika, Italian seasoning, salt & pepper to the crumbs – it’s amazing!
