Happy September, friends! September is hands down my favorite month and I’d take 12 of them all year long if I could. There are so many things to love about this month. We are welcomed by my favorite season of all. I love the smell of the crisp autumn air, I love that you can enjoy the sunshine in the afternoon with just a t-shirt but then need a cozy sweater come evening. A hot cuppa (tea for me) tastes so much better when it’s actually warming you up on a chilly morning. The leaves are changing and look oh so beautiful. Pumpkins are everywhere and in everything, including these Kodiak Pumpkin Muffins.

 As a recipe blogger fall is my favorite time to get busy in the kitchen and create all those comfort food dishes that we crave like stews, chilis, soups, and of course, all the pumpkin baked goods our little hearts desire. These Kodiak Pumpkin Muffins are so simple to whip up with the use of the Kodiak protein pancake mix. It keeps these muffins to just one Weight Watchers point each. 

Three reasons why you need to make this recipe! 

It’s pumpkin spice heaven.

If you love pumpkin spice season, these are going to be your new best friend. With pumpkin puree added as well as pumpkin pie spice, you get a boost of autumn flavor in every bite. 

Pumpkin Protein Muffins – need I say more?

You get a boost of pumpkin, yes, but these are also packed with protein (for a muffin at least). Each muffin has 4 grams of protein thanks to the protein packed Kodiak pancake mix. 

Each muffin is under 75 calories. 

It’s hard to find a fun pumpkin treat under 400 calories, much less under 100 calories. These muffins are 63 calories each, and with only 1 Weight Watcher point, you can snack on a few! 

Ingredients you need to make Kodiak Pumpkin Muffins: 

  • 2 eggs
  • ½ cup unsweetened almond milk
  • 1 teaspoon vanilla
  • ¾ cup pure pumpkin
  • 1 ⅓ cup Kodiak Cakes Protein Packed Buttermilk Mix
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • ½ tablespoon brown sugar
  • ½ teaspoon cinnamon

How to make Kodiak Pumpkin Muffins (step by step): 

  1. Preheat the oven to 350F, and spray a regular size muffin tin with some nonstick spray. I would not use liners for these. 
  2. In a bowl, whisk the eggs with milk, then stir in the pumpkin and vanilla and mix well.
  3. Stir in the Kodiak Cakes Mix, baking powder, and pumpkin pie spice.
  4. Divide the batter evenly over the 12 muffin cups.
  5. In a little bowl, mix the brown sugar and cinnamon together then sprinkle over the 12 muffins.
  6. Bake in the oven for 20 minutes, let them cool for 5 minutes, and serve warm.
  7. Enjoy!

Different ways to change up this recipe: 

  • You can use a different pancake mix if you can’t find Kodiak Cakes. The points may change though so double check your WW Recipe Creator in the app. Trader Joe’s has a protein pancake mix that’s comparable. 
  • Adding Lily’s No Sugar Added Dark Chocolate Chips will give you a yummy pumpkin chocolate chip muffin. It won’t add a ton of points either. 

Tips and Tricks for Making Kodiak Pumpkin Muffins: 

  • Kodiak Pumpkin Muffins can be kept on the counter in an airtight container for 4-5 days. If you make a double batch, store the extras in a freezer in a ziplock freeze bag. 
  • You can make this batter into “pumpkin snack cakes” by baking it in a square pan for about 20 minutes. 
  • If you don’t have pumpkin puree, you can substitute a mashed banana or applesauce. It just won’t have the pumpkin flavor.
