Prep Time 10 minutes
Cook Time 1 hour 10 minutes
Total Time 1 hour 20 minutes
Servings 8
4SP blue, purple & green or 4pp per serving

Ingredients

  • 1.5 lbs raw extra lean ground beef
  • 1/2 cup diced peppers
  • 1/2 cup diced onion
  • 1/2 cup panko bread crumbs
  • 1/3 cup reduced fat shredded mozzarella
  • 1/3 cup pizza sauce
  • 2 tsp italian seasoning
  • 20 pepperoni slices (cut into small pieces (56g))
  • Topping
  • 2 Tbsp pizza sauce
  • 1/4 cup reduced fat shredded mozzarella
  • 15 pepperoni slices (42g)
  • Sprinkle of italian seasoning

Instructions

  • Preheat oven to 350F, line a baking sheet with parchment paper (use a baking sheet with raised edges as there will be grease from your beef as it's cooking)
  • Cut your 20 slices of pepperoni up into small pieces.
  • In a large bowl mix all of your ingredients together using your hands (except topping ingredients)
  • Form into a log shape, approx 10 inches long.
  • Bake in oven for 55 minutes, remove from oven and spoon your 2T pizza sauce on top. Add cheese and top with pepperoni slices and seasoning. Return back to oven for 15-20 minutes.
  • Let cool for 5 minutes then cut into 8 slices. Each slice is 4sp on all 3 MyWW programs or 4pp
  • *Note, you can cut slices thinner for more of a yield, there is 34 smart points in total in recipe based of my ingredients, so if you cut into 10 slices you can do the math.. Feel free to add extra 0 point toppings such as mushrooms..
  • * I added pictures of the nutritional info for both my pepperoni and my cheese so you can compare with a similar brand.
  • Nutritional info *not incl veggies) per slice.. Calories 164.. Fat 6.2g.. Saturated fat 2.4g... Carbs 5.5g.. Fiber 0.3g.. Sugars 1.4g.. Protein 22.3g

This was really good! Used turkey pepperoni and left out the peppers. SautΓ©d the onions just a little bit after chopping really small. (Hubby doesn’t like peppers) Turned out great! Thanks for the recipe!

Friend of mine just posted this on Facebook b/c she made it… MAN this looks delicious! Wonder how the consistency would be using half beef / half turkey (or all turkey)…hmmm… Can’t wait to make it!

Hi, I have had people tell me they already made it using all ground turkey and loved it.. I’m just personally not a fan of ground turkey, but if you are it should work fine πŸ™‚

Its in my oven right now
My pepperoni is higher calories and fat though πŸ™

Yeah pepperoni can vary in calories etc.. over all though it should not make a huge difference to each serving.. Hope you enjoy it!

Hi Kate, My mom has been doing a version of this (that’s why I was shocked when I saw the title of Pizza Meatloaf in the MSN article I was reading) since the 1960s(I am 60 yrs+). My children have grown up on this, with secret veggies they never knew about(33 & 27 yrs). I started the Pizza Meatloaf Roll, after putting ingredients-divided in and mixing with meat(I use 1lb ground turkey & sprinkle w/beef seasoning, hubby & kids never knew), I flatten meat mixture on wax paper, then put cheeses etc (minus panko)in middle roll it up, and put in pyrex loaf pan. It can be a little tricky trying not to roll the wax paper in with the meat and then lifting into the loaf pan. But they love it!!

This is probably a silly question, but just getting ideas of what to serve with this for sides? I’m doing my meal planning for next week, and hubby really wants me to make this! Thanks in advance πŸ™‚

Hi Cassandra, I would suggest a ceasar salad or maybe some garlic bread, homemade or the garlic knots from Walmart are really yummy πŸ™‚

Just had a question on the pepperoni. Is it 20 total or 15? Is the 15 for the topping only? Thanks!

So 20 are cut up and in the meatloaf and then you see “topping” and that’s an additional 15 slices πŸ™‚

Hi, there would be no changes, sane as old smart points as there is nothing in the recipes that is now a zero point food unless you swap out the beef for turkey/chicken

I have made this several times and it comes out tasting great every time. I leave out the peppers and use basil instead of Italian seasoning.
