What’s not to love about pizza and meatloaf?! Nothing- so I’ve put them together in this recipe for Pizza Meatloaf. I’ve been wanting to test a pizza meatloaf for a while, and boy am I glad I finally did. This was a little taste of heaven!! I loved how easy it was to prepare as meatloaf usually is. You can have it in the oven within 10 minutes. Pizza Meatloaf is also perfect for using your favorite zero point pizza toppings so you can ensure you have it flavored just like you like it without any additional Weight Watchers points. This delicious dish will be a family favorite in no time. 

DSCN4937Pizza Meatloaf works great for meal prep lunches too. You get fantastic flavor (as we all know leftovers taste better) and it reheats great. One serving will give you 23 grams of protein and only 6 grams of carbs and 200 calories. It’s an amazing, filling work lunch option.

Three Reasons You Need to Make Pizza Meatloaf:

1. The oven does most of the work. 

As with most meatloafs, the prep is easy. Throw all ingredients in a bowl and mix. Gently form a loaf shape or use a loaf pan and then all you have to do is let it cook away in the oven. 

2. It’s a great change-up from “pizza night”. 

Pizza night with the kids is great, but it’s not easy on the diet. Most pizzas will cost you a lot of Weight Watcher points. This meatloaf will give everyone a taste of pizza but will keep your points in check so you can enjoy dinner with the whole family. And you can feel good about what you’re feeding your family too. 

3. You can use any toppings that you like. 

Finally, a pizza dish where you can load up on veggies if that’s your style, or use none at all. It’s all about you and your pizza dream in this recipe. Use the base recipe as a guide, then follow your heart! 

DSCN4989Ingredients you need to make Pizza Meatloaf: 

  • 1.5 lbs raw extra lean ground beef
  • ½ cup diced peppers
  • ½ cup diced onion
  • ½ cup panko bread crumbs
  • ⅓ cup reduced fat shredded mozzarella
  • ⅓ cup pizza sauce
  • 2 teaspoons Italian seasoning
  • 20 pepperoni slices (56 g), cut into small pieces 

Pizza Meatloaf Topping

  • 2 tablespoon pizza sauce
  • ¼ cup reduced fat shredded mozzarella
  • 15 pepperoni slices (42 g)
  • Sprinkle of Italian seasoning

  1. Preheat the oven to 350F and line a baking sheet with parchment paper. You need to use a baking sheet with raised edges as there will be grease from the beef as it’s cooking. 
  2. Cut the 20 slices of pepperoni up into small pieces.
  3. In a large bowl, mix all of the ingredients together using your hands (hands really are the best kitchen tool for mixing!). The only ingredients you aren’t mixing in are the toppings. 
  4. Form the meatloaf mixture into a log shape, approx 10 inches long.
  5. Bake it in the oven for 55 minutes then remove it from the oven and spoon the 2T pizza sauce on top. Add the cheese and top with pepperoni slices and seasoning. Return the topped meatloaf back to the oven for 15-20 minutes, so the cheese can melt. 
  6. Let it cool for 5 minutes then cut into 8 slices.

  • Feel free to add extra zero-point toppings such as mushrooms, bell peppers, olives, basil, etc. 
  • Use turkey pepperoni to save points! 
  • Try using ground turkey breast or ground chicken breast instead of beef to save the recipe 18 points. If you feel it’ll be too dry, you can do a mixture of half beef and half turkey. 
  • You can use any kind of cheese you like – a three cheese blend works great. But mozzarella is easy to find low fat. 
  • If you’re worried about the meatloaf being bland due to no salt and pepper added, use seasoned bread crumbs to help add flavor. The Italian seasoned bread crumbs work great in this dish.

  • I added pictures of the nutritional info for both my pepperoni and my cheese so you can compare them with a similar brand.
  • You can cut slices thinner to yield 10-12 servings, especially if you are serving the meatloaf with sides. There are 34 smart points in total in the recipe based on my ingredients, so if you cut it into 10 slices you can do the math.
  • Keep Pizza Meatloaf stored in the fridge for up to 7 days. It makes a great meal prepped lunch! 
  • You can freeze the cooked meatloaf for up to three months. I suggest baking it in an aluminum loaf pan if you know you’re going to freeze it. Batches of these make great freezer meals.

  1. This was really good! Used turkey pepperoni and left out the peppers. Sautéd the onions just a little bit after chopping really small. (Hubby doesn’t like peppers) Turned out great! Thanks for the recipe!

  2. Friend of mine just posted this on Facebook b/c she made it… MAN this looks delicious! Wonder how the consistency would be using half beef / half turkey (or all turkey)…hmmm… Can’t wait to make it!

    1. Hi, I have had people tell me they already made it using all ground turkey and loved it.. I’m just personally not a fan of ground turkey, but if you are it should work fine 🙂

    1. Yeah pepperoni can vary in calories etc.. over all though it should not make a huge difference to each serving.. Hope you enjoy it!

  3. Hi Kate, My mom has been doing a version of this (that’s why I was shocked when I saw the title of Pizza Meatloaf in the MSN article I was reading) since the 1960s(I am 60 yrs+). My children have grown up on this, with secret veggies they never knew about(33 & 27 yrs). I started the Pizza Meatloaf Roll, after putting ingredients-divided in and mixing with meat(I use 1lb ground turkey & sprinkle w/beef seasoning, hubby & kids never knew), I flatten meat mixture on wax paper, then put cheeses etc (minus panko)in middle roll it up, and put in pyrex loaf pan. It can be a little tricky trying not to roll the wax paper in with the meat and then lifting into the loaf pan. But they love it!!

    1. Hi Cassandra, I would suggest a ceasar salad or maybe some garlic bread, homemade or the garlic knots from Walmart are really yummy 🙂

    1. So 20 are cut up and in the meatloaf and then you see “topping” and that’s an additional 15 slices 🙂
