I am in love with this Chicken Alfredo Bubble Up casserole mostly because it’s packed with fantastic flavor while only being five Weight Watchers points per serving. My bubble up casseroles are filling and the perfect mix of all the favorite classic foods. Add a side salad and you have a great, easy family meal perfect for busy weeknights.

By using pre-cooked shredded chicken, like leftover rotisserie chicken, and frozen broccoli, the prep of this meal is a breeze. I love recipes that are easy to throw together, but still taste amazing, and this Chicken Alfredo bubble up is it! My whole family enjoyed it, even with the broccoli mixed in. Use this recipe to introduce veggies to your kids, and I doubt you’ll have any issues. They’ll gobble it right up. Light alfredo sauce makes it easy to keep the calories low too. If you haven’t tried the lightened up version of Alfredo sauce that is available in most stores, I highly suggest using it. It’s still creamy and cheesy – just has fewer calories than its regular counterpart.

Three reasons why you need to make this recipe!

Skip the high calorie bowl of chicken alfredo, and make this instead.

You’ll save yourself hundreds of calories by making this chicken alfredo bubble up instead of a big bowl of pasta. Most restaurant pasta dishes end up around 1000 calories, but this casserole offers a serving for just 236 calories.

You can meal prep your busy weeknight dinners.

Chicken alfredo bubble up makes fantastic leftovers so I suggest making enough for you to eat throughout the week. It’s easy to reheat and makes a tasty dinner on busy weeknights.

It’s not high in saturaded fat.

Most Alfredo sauce or chicken alfredo meals are extremely high in saturated fat because it’s made with a lot of butter and cheese. One serving of this casserole is only 3 grams of saturated fat, so you can feel good about what you’re eating.

  • 3 cups frozen broccoli

How to make Chicken Alfredo Bubble Up (step by step):

  1. Preheat the oven to 375F and spray a 9×13 casserole dish with nonstick cooking spray.
  2. Cut the 10 biscuits into 6 small pieces each and layer them in the bottom of the dish. If you want, you can pre-bake the dough for 5 minutes (some ovens vary and some may find the middle does not cook through, I never have an issue but pre-baking should eliminate this from happening)
  3. Cook the broccoli in the microwave as directed on the package.
  4. In a bowl, mix the broccoli, cooked and cubed chicken, salt, pepper, alfredo sauce, and mozzarella cheese until it’s well combined.
  5. Spoon the mixture evenly onto the biscuit pieces and bake in the casserole in the oven for 25 minutes. Remove it from the oven and add the asiago cheese on top. Return it to the oven for 15-20 minutes.
  6. Let it cool for about 5 minutes then cut into 6 equal servings. Enjoy!

Different ways to change up this recipe:

  • Great Value is a good brand of biscuit dough that still offers the 4 value pack of 7.5 oz packages. If you can’t find those just weigh out 7.5 oz of dough from a bigger pack.
  • Feel free to substitute for a cheese of your liking, if you’re not a fan of asiago. I love the bite it gives, but parmesan is also a good choice.

  3. I definitely prefer just the broccoli, Alfredo and cheese. When making this the biscuits were too hard for me.

    1. Sorry the biscuits were too hard 🙁 but glad you still enjoyed the dish without and it must be nice and low in points 🙂 you could try leaving it in the oven for less time

  4. This looks so delicious. I’m going to make it for my family tonight and I’ll let you know how it goes. I have a son who is a picky eater and I’m trying to find ways other than threats to get him to eat more vegetables. Hopefully he’ll love this. Thank you so much for sharing and thank you for calculating the SP!

    1. Your very welcome, I hope he enjoys it, I too have a picky child, she’s 13 now and still just as picky lol 😉 Good luck!

  5. Any reason for frozen broc vs fresh? I always have fresh on hand but generally not frozen. Would it work out ok with fresh?
I’ve noticed that with at least one other recipe from your site – so I guess more of a general question.

    1. Hi Allison, nope no reason and fresh will work just as well, I guess it’s just a preference and I am not always sure when I will create a new recipe so I keep frozen in the freezer for convenience 🙂

  6. Do you think this would freeze well? This recipe looks absolutely amazing, but I basically only cook for 1 (since my 3 year old wont eat most foods) and I don’t want any of this recipe go to waste!

    1. Yes I think it should freeze ok, I personally have not frozen bubble ups but know others who have and say it’s ok

  7. Made this tonight…definitely a keeper. I had some mushrooms that needed to be used so I sautéed them up and threw them in too.
Going to try mushroom and asparagus next time. Thanks!

  8. 5 stars
Awesome recipe! There was one piece leftover and all of us wanted to take it for lunch! Guess next time I will make two and have enough for lunch for everyone! Thanks so much, love your recipes!

My son won! My second son ate this for the first time last night. He says he wants it again tonight. What a hit! This is now a favourite for all five of us. thank you.

    1. The post will tell you I use a 9×13 dish, I do for all my bubble ups, the biscuits I use are a 7.5oz pack of 10 small biscuits, then each biscuit is cut into 6 small pieces, so you have 60 small pieces of dough to cover the bottom and I can assure you it is enough (check picture on post) I have made several bubble ups all of them using the same amount of biscuits
