I get excited when I think of a new bubble up recipe to create, they have become a great simple dish in my house that everyone enjoys and keeps me on track! I was thinking about my chicken ranch spaghetti bakeΒ and how much I love the flavors in it so I incorporated similar ingredients into this creamy chicken bacon & ranch bubble up and the end result was delicious! I know some people can’t find the 7.5 oz biscuit packs, I buy the great value brand at Walmart in the U.S, it’s a 4 value pack, if you need to buy bigger biscuits then just weigh out 7.5oz, I also suggest cutting the biscuits open in half then each half piece into 6 pieces as the biscuits will be larger and you want as many small dough pieces as you can get. This yummy dish serves 6 at 5 freestyle smart points per serving.

Creamy chicken bacon & ranch bubble up

Ingredients

  • 1 7.5 oz biscuit pack
  • 8 oz cooked shredded chicken
  • 1- 28 g ranch dip package
  • 3/4 cup 1% milk
  • 5 oz light shredded mozzarella (I used Trader Joe's brand, 5oz=6SP)
  • 1/4 cup fat free sour cream
  • 5 slices center cut low point bacon (cooked and crumbled)
  • Green onion (optional)

Instructions 

  • Preheat oven to 350F, spray a 9x13 casserole dish with some non stick spray.
  • Cut your biscuits into 6 pieces each and spread dough pieces over bottom of casserole dish.
  • In a bowl mix your shredded chicken, ranch dip mix, sour cream, milk and half of your cheese (2.5oz) mixture won't be too thick.
  • Place by spoonfuls over top of your biscuit pieces cover all areas. Top with your remaining cheese, crumbled cooked bacon and green onion.
  • Bake in oven for approx 40-45 minutes until biscuits are cook through.
  • Cut into 6 equal servings, each serving weighing approx 6.5-7oz, bubble up should freeze well.

      I buy the Wegman’s center cut bacon in the U.S it is 2SP for 3 slices , I usually say the brand in my post πŸ™‚

    I made this tonight and it is delicious!!!! I am so happy that I stumbled upon your website. Tomorrow starts my third week on my Weight Watchers journey. I am going to freeze half of it. How would I reheat it after it has been frozen?

      I weigh and measure the chicken, the cheese I just use a measuring cup, I think getting caught up in both can cause too much stress πŸ˜‰

    I am wondering what I did wrong, although tasty, it was sorta dry and not at all creamy,it seems like it needed more liquid.

      Hi Bonnie.. hmmm sorry it is hard for me to pin it to something when I am not there, if it was dry then yes maybe something went wrong with the sauce, try increasing your milk slightly.. You definitely used the right sized biscuits? The small 7.5oz can (10 small biscuits in the roll)

      Yes weigh it out but cut them open and then into small pieces, I buy the biscuits in the U.S, just make sure they are small pieces or you might not have enough to cover the bottom

  11. I made this tonight taking advantage of husband being out of town (he hates creamy stuff!) it was really good,
    But I cooked mine 40 minutes and it was kind of dry. Are the biscuits supposed to β€œpuff” up at all? We still ate it and really enjoyed it just wondering how I can make it a little more moist.

      Hi Julie, sorry to hear that, are you sure you are using the right size biscuits? If your pack is larger than the small 7.5 oz pack I used then it would cause it to be too dry

  14. I made this tonight and, while delicious, it was super salty and I’m not usually salt sensitive. I noticed the brand of ranch mix you use is less sodium but I can’t find it anywhere. I used Hidden Valley Dip mix. Should I have used the Hidden Valley ranch dressing and seasoning mix?

      Hi Anya, sorry to hear it was salty, I’m not sure where you are located, I’m in Canada and if you are in the U.S it might come down to what is available here versus there, maybe try another brand?
