Banana berry oatmeal muffins

I had 2 very ripe bananas starring at me all day.. I could hear them telling me to use them up or throw them away,ย  and I hate throwing ripe bananas away, there’s so many things you can make with them ๐Ÿ™‚ย  I hadn’t planned my breakfast for the next morning yet and thought muffins would be a good quick and easy choice..These banana berry muffins are scrumptious.. bursting with berries and nice and filling too! Best part… there only 3 smart points each… Mmmmm muffins ๐Ÿ™‚

Ingredients
  • 2 mashed ripe bananas
  • 1 egg
  • ¾ cup almond milk
  • 1 tsp vanilla
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 2 cups oats
  • ¼ cup fresh blueberries
  • ½ cup fresh raspberries (feel free to switch up the berries)
Instructions
  1. Preheat oven to 350F, spray a regular sized muffin pan and set aside.
  2. Mash your bananas in a large bowl, add your egg, milk and vanilla and mix well.
  3. Add your sugar, baking powder, cinnamon and oats, and mix.
  4. Very gently fold in your berries, batter wont be thick.
  5. Divide batter over your 12 muffin cups, try to divide up your berries so there is similar amount in each muffin.
  6. Bake in oven for 20 minutes, let cool. Makes 12 muffins at 3sp or 2pp each..
  7. For best results store in an air tight container in the fridge. *Note, if you lower the brown sugar to 2.5 Tbsp these muffins are only 2 SP freestyle points

    Thanks so much for posting your recipe! I have been following you on Instagram for some time now and really enjoy all your creative ideas. I tried the muffins today and they were great! The only thing missing was when to add the brown sugar, I assumed it was after the vanilla :). Thanks for your recipes! Jaden:)

      Hi Jaden, thanks for catching that ๐Ÿ˜‰ Although I try and proof read several times one out of every so many it never fails and I miss something lol.. luckily it doesn’t make a big difference.. just adding with the rest of the dry is good..     could you sub 1/4 c honey instead of brown sugar and maybe some 1 cup applesauce instead of 2 bananas just use one

      Hi there, not sure about the honey in replacement to the brown sugar, it will create a different texture..applesauce for banana would work.. best to try it out and see ๐Ÿ™‚

    Looking forward to trying this recipe. I put it in ww recipe builder and it came out as 2 sp. Is the almond milk sweetened in your recipe?

    Looks yum! I have a bag of frozen blueberries in my freezer that need to be used. Could I sub frozen for fresh?

      Yes I think so , sometimes frozen fruit has more water so just be careful of that

    Have you ever used chopped strawberries? Mine keep coming out to moist. Any ideas?

      Fruit definitely will add moisture to the muffins, maybe chop smaller and now but you can try strawberries, again small pieces

    Hi, After buying all the ingredients to make these muffins, i realized the Almond milk i purchased was sweetened. I was thinking of reducing the brown sugar to compensate for the sweetened milk. Do you know if this would work and any suggestions on how much I should reduce the sugar by?

      Hi, I say just use the sweetened milk as is, I doubt it will change the points, hope you enjoy them

    Hello! I am allergic to bananas, so that often rules out yummy WW baked goodies! Any suggestions for a substitution?

      Hi Jessica, you can use applesauce or pumpkin, sometimes depending on the recipe greek yogurt
