I had 2 very ripe bananas starring at me all day.. I could hear them telling me to use them up or throw them away, and I hate throwing ripe bananas away, there's so many things you can make with them 🙂 I hadn't planned my breakfast for the next morning yet and thought muffins would be a good quick and easy choice..These banana berry muffins are scrumptious.. bursting with berries and nice and filling too! Best part... there only 3 smart points each... Mmmmm muffins 🙂
Banana berry oatmeal muffins
1-3PP, 3SP blue & green, 1SP purple
Ingredients
- 2 mashed ripe bananas
- 1 egg
- ¾ cup almond milk
- 1 teaspoon vanilla
- ¼ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- 2 cups oats
- ¼ cup fresh blueberries
- ½ cup fresh raspberries feel free to switch up the berries
Instructions
- Preheat oven to 350F, spray a regular sized muffin pan and set aside.
- Mash your bananas in a large bowl, add your egg, milk and vanilla and mix well.
- Add your sugar, baking powder, cinnamon and oats, and mix.
- Very gently fold in your berries, batter wont be thick.
- Divide batter over your 12 muffin cups, try to divide up your berries so there is similar amount in each muffin.
- Bake in oven for 20 minutes, let cool. Makes 12 muffins at 1-3PP depending on your 0PP foods, 3SP blue & green, 1SP purple, or 2 points plus each..
- For best results store in an air tight container in the fridge. *Note, if you lower the brown sugar to 2.5 tablespoon these muffins are only 2 SP (blue & green) freestyle points

could you sub 1/4 c honey instead of brown sugar and maybe some 1 cup applesauce instead of 2 bananas just use one

Hi there, not sure about the honey in replacement to the brown sugar, it will create a different texture..applesauce for banana would work.. best to try it out and see 🙂

Yes I think so , sometimes frozen fruit has more water so just be careful of that

Fruit definitely will add moisture to the muffins, maybe chop smaller and now but you can try strawberries, again small pieces

Hi, After buying all the ingredients to make these muffins, i realized the Almond milk i purchased was sweetened. I was thinking of reducing the brown sugar to compensate for the sweetened milk. Do you know if this would work and any suggestions on how much I should reduce the sugar by?

Hi, I say just use the sweetened milk as is, I doubt it will change the points, hope you enjoy them

These are SO GOOD! I have used many of your recipes over the past couple of years but just say this one. Made them a couple of days ago and they are my new favorite breakfast muffin! I cut sugar in 1/2 and used some Stevia and got them down to 2 pts a muffin. Thank you for sharing your recipes.
