Preheat oven to 375°F. Line a baking sheet with parchment paper or foil.
Combine the flour and Greek yogurt in a large bowl. Mix it by hand, kneading it in the bowl to incorporate the ingredients.
Once a dough ball is mostly formed, some extra flour should be on the bottom of the bowl. Move the extra flour to a work surface and continue kneading the dough on the table. This extra flour will prevent it from sticking.
Knead the dough until smooth and flour is mixed in, about 2- 4 minutes.
Divide the dough into 8 equal portions. Roll the portions into a breadstick shape; they will be long and thin strands. They may seem small, but they will puff up in the oven!
Allow the uncooked breadsticks to rest for 10 to 15 minutes while you work on the garlic butter.
Make the garlic butter in one of two ways. First, you can sauté the garlic in the butter over medium heat on the stovetop to lightly brown it and melt the butter, then use a pastry brush to spread the mixture on the breadsticks. The other option is to use a food processor, create a paste with the garlic and butter, and then apply it to the breadsticks.
Sprinkle on your preferred seasonings, like salt or garlic salt, and herbs such as parsley, thyme, Italian seasoning, etc. You can also use onion powder or other seasonings!
Bake the breadsticks in the preheated oven for 18 to 20 minutes until the edges are golden brown, and the tops also starts to darken. The bottoms will be a nice color, too! For best results, enjoy warm and fresh.
