The crunchiness of the cabbage paired with the brightness of the salsa turn the ordinary chicken breast into something extraordinary. These are so tasty you won’t believe they only cost 2 points per taco if you use corn tortillas.

The recipe comes together so quickly, you can easily throw it together after a long day. Use your favorite store-bought salsa to save time, or make this zero point roasted poblano salsa  ahead of time (You had to know I was gonna make something to highlight the delicious roasted poblano salsa this week!)

Step by Step Instructions for weight watchers chicken tacos

  1. Season and cook chicken breast with cooking spray in a nonstick skillet until cooked through. Allow to cool and cut into strips. 
  2. Thinly red slice cabbage (cut into quarters and cut thin strips in the short direction for optimal sizing). Toss sliced cabbage with lime juice and salt to taste. 
  3. Cut avocado in half, cut long strips lengthwise, and use a spoon to remove from skin. Set aside one avocado slice per taco. 
  4. Gently warm tortillas in microwave or oven.
  5. To serve, place tortilla on plate. Spoon approximately two tablespoons of salsa on bottom. Place chicken strips above, topped with cabbage slaw, avocado, and another drizzle of salsa.

  • Weight Watchers shrimp taco – Sub quick sauteed shrimp for the chicken. Try seasoning with garlic, chile powder, lime zest, salt and pepper.

  • This is a mild heat recipe, based on the spiciness of the salsa.
  • For more heat, top with thinly shaved fresh jalapenos or jarred pickled jalapenos
