I love pan frying the shrimp and veggies with a tiny bit of olive oil or cooking spray. Ingredients

  • 7 small low carb corn tortillas 
  • ½ lbs medium shrimp de-shelled and deveined
  • 1 cup mushrooms – sliced 
  • ½ cup shredded purple cabbage 
  • 1 cup avocado chunks 
  • 2-3 garlic – sliced 
  • 2 oz cilantro 
  • 2 oz green onions – chopped 
  • 4 oz reduced fat shredded cheddar cheese 
  • 2 tsp olive oil (or cooking spray) 
  • Lemon juice 
  • 1 tbsp chipotle seasoning blend (or combine equal parts chipotle pepper, chipotle chili powder, paprika, ground cumin, garlic powder, oregano, and salt)

How to make chipotle shrimp tacos

  1. Remove the tails from the shrimp and transfer them into a mixing bowl with the olive oil, garlic slices, and seasoning and toss
  2. Heat your skillet on medium high then transfer the shrimp into the pan and cook for approximately 5 minutes (tossing a few times) 
  3. While it’s cooking add the mushrooms, cilantro, and green onions into the mixing bowl with a bit more seasoning 
  4. Add this mixture into the pan with the chipotle shrimp and squeeze the lemon juice in and cook another 5 minutes
  5. Let them rest for 2-3 minutes then fill up the tortillas with the shrimp mixture, avocado chunks, and shredded cabbage! 
  6. Drizzle with salsa if you like a saucier taco.

Recipe variations and substitutions

  • Pick your favorite vegetable for these tacos! If you don’t prefer mushrooms or shredded cabbage try something else like spinach and cauliflower rice.
  • Ditch any heavy sauces for salsa or hot sauce. 
  • Want to cut the calories and carbs even more? Substitute the tortillas for lettuce wraps and use cooking spray instead of olive oil. 

Tips and tricks

  • Prep all your vegetables, garlic, lemon, and spice mixture ahead of time for a fuss free cooking process.
