The reason these brownies are low in points is that I used a light butter replacement and a sugar substitute in the brownie batter. As for the toppings, I used regular marshmallows, but the graham crackers are low-fat, and the chocolate chips are made with stevia. But you would never know!

  • ¾ cup Unsweetened cocoa powder
  • 2 tbsp Unsweetened applesauce
  • 1 tsp Vanilla extract
  • 1 cup Zero-calorie sweetener (use a cup-for-cup sugar replacement, like monk fruit powder with erythritol)
  • 2 Eggs
  • ½ tsp Table salt
  • ¾ cup All-purpose flour

  • 2 Low-fat graham crackers, crushed
  • 0.75 oz (by weight) Lily’s dark chocolate chips

Instructions for making S’mores Brownies (Step by Step)

  1. Preheat oven to 325°F. In a large mixing bowl, make a paste by mixing together the butter substitute, cocoa powder, vanilla extract, and applesauce. Make sure there are no pockets of cocoa.

2. Add the eggs and sweetener, mixing to dissolve the sweetener.

3. Lastly, add the flour and the salt. Mix to form a batter. Don’t over-mix!

4. Transfer the batter to a parchment-lined or greased 8 x 8 baking dish; it will be thick. Spread evenly.

5. Scatter the chocolate chips, mini marshmallows, and crushed graham crackers on top.

6. Bake the brownies for 32 to 37 minutes or until thoroughly baked, and the center is set. Be careful not to overbake! You want them to be soft so they are fudgy and chewy when they cool.

7. After baking, loosen any marshmallows that got stuck to the parchment or the baking dish, and allow the brownies to cool before cutting.

Tips and Tricks for Making the Best Weight Watchers S’mores Brownies

  • Make sure not to over mix the batter, as it will give the brownies an unpleasant texture. You just need to mix until all of the flour clumps are gone.
  • To check if the brownies are done, you can either insert a knife into the center to see if it comes out clean or you can gently shake the pan. If they are done, the center will be set and not jiggle. Also, the marshmallows will be golden brown and the brownie edges will be very firm.
  • How to Store Homemade Brownies: Keep these brownies in a container and either tightly wrap it with plastic wrap or use a lid. They do not need to be refrigerated. I suggest reheating the leftover brownies in the microwave before enjoying them!
  • You can also freeze any extra brownies that you have. However, the marshmallows on top might not have the same exact texture after thawing.
