Summer parties and gatherings are just around the corner, and as always, I’m on the lookout for easy, crowd-pleasing appetizers! These hot chicken cheese rolls fit the bill perfectly – they’re super simple to whip up, delicious, and did I mention they were devoured in about 10 minutes at the last gathering? With just a few ingredients, you can prep them ahead for a stress-free party, and best of all, they’re customizable! The chicken and cheese combo is a classic, but feel free to switch things up with turkey and Swiss, or any of your favorites. Oh, and if you’re tracking those WW points, these tasty snacks are only 3 points each, so you can indulge without the guilt! And if you love cooking for parties, but hate complicated recipes, this one is perfect for you. Just six ingredients, and you’ve got a mouthwatering appetizer ready to serve. They don’t have to be cooled or served hot so transportation is easy.

They are very versatile.

You can use any type of deli meat you like, or even some leftover rotisserie chicken as long as it’s small enough! Feel free to even switch up the cheese if you like something better than provolone. A spicy pepper jack would be fantastic.

There’s nothing worse than going to a party and not being able to enjoy the food alongside everyone else. Because these rolls are so Weight Watchers friendly, you can ensure that there’s something at the party for you to snack on. 

They’re easy to make ahead of time.

I love recipes that allow you to get things done a day or two ahead of time. These rolls are perfect for preparing before guests arrive so you’re not stuck in the kitchen while they’re visiting. 

Ingredients you need to make Chicken Cheese Rolls: 

  • 1 package of Pillsbury pizza dough
  • 5 oz thinly sliced lean deli chicken
  • 3 oz thinly sliced light provolone cheese
  • 1 tablespoon melted butter
  • ½ tablespoon brown sugar
  • ½ tablespoon Dijon mustard

How to make Chicken Cheese Rolls (step by step): 

  1. Preheat oven to 350F, and spray a 9×13 casserole dish with some nonstick cooking spray.
  2. Roll out the pizza dough so it is fairly thin without breaking apart.
  3. Cover the dough with the thin deli chicken then layer the chicken with the cheese 
  4. Roll the pizza dough up so you have one long roll, then cut it into 16 equal rolls. Place the rolls into the baking dish.
  5. In a small bowl, mix together the melted butter, brown sugar, and Dijon mustard. Using a pastry brush, brush each roll with the mixture.
  6. Bake them in the oven for approximately 35 minutes or until a nice golden brown forms on top.
  7. Serve warm and enjoy!

Different ways to change up this recipe: 

  • I went to my local deli and had them slice some light provolone cheese as thin as they could. Ask at your deli, and you can use a different cheese if you can’t find a light provolone.

Tips and Tricks for Making Chicken Cheese Rolls: 

  • The best way to cut the rolls evenly is to cut the roll in half, then cut those halves in half and repeat till you have 16 pieces.
  • You could easily prep these for a party and place the roll in the fridge then cut and bake them at the time they are needed.
  • These will keep well in the fridge for 3-5 days, just pop in an air fryer to reheat any leftovers. They do not freeze well.

  1. These look super. Always looking for someunew. I find with WW the more you keep from getting bored the better. We have been lifers since 2002 but slid back a few times but now hubby is down to 178 and this morning I was 118 so I am happy. So plan to keep moving forward and sticking with the green program it works for us. So thanks for your goodies along the way.
