  • ½ cup of marinara sauce, no sugar add, 140 g.
  • ½ cup of grated mozzarella cheese, 60 g.
  • 300 g. of chicken breast, deboned and skinless
  • 1/3 cup of plain fat free yogurt, 85 g.
  • 6 florets of cauliflower, 250 g.
  • 1 lime
  • 1 tbsp of soy sauce
  • 1 tbsp of Worcestershire sauce
  • ½ tsp of salt
  • ½ tsp of ground black pepper
  • 1 tsp of taco seasoning
  • 1 tsp of stevia
  • A bunch of coriander

Preparation time: 20 minutes

Cooking time: 20 minutes

Instructions:

1. Marinate the chicken breast with lime juice, soy sauce, Worcestershire sauce, salt, black pepper, and taco seasoning. Allow it to marinate for at least 30 minutes.

2. Preheat the oven to 350 and place the marinated chicken breast in a baking dish. Bake it until golden and cooked through.

3. In a separate bowl, mix the marinara sauce, yogurt, and stevia to make the sauce.

4. Remove the chicken from the oven and generously coat it with the sauce. Sprinkle grated mozzarella cheese over the top.

5. Return the chicken to the oven and broil until the cheese is melted and bubbly.

6. Cut the broccoli florets and use them to make cauliflower “rice”. Sauté the “rice” in a pan with 2 tablespoons of water and 2 tablespoons of marinara sauce.

7. Prepare the pico de gallo by combining diced tomatoes, onions, jalapenos, cilantro, lime juice, and salt.

8. Serve the Fiesta Lime Chicken over the cauliflower “rice” and top it with pico de gallo.

  • When you cook with yogurt your sauce can break. To prevent this, let the yogurt come close to room temperature before putting it in the sauce. Don’t let the sauce boil. And if you are still having trouble with the sauce breaking add 1 tsp of cornstarch to the yogurt before cooking
  • Marinate the chicken for the recommended time in the recipe. This will allow the flavors of the seasonings to penetrate the meat, providing a more authentic taste. If possible, use fresh oregano leaves to enhance the aroma.
