Ingredients

  • 3 large low carb flour tortillas
  • 1 cup pepperoni slices 
  • ½ cup shredded low fat mozzarella cheese
  • ½ cup shredded low fat cheddar cheese
  • ½ cup pizza sauce
  • 1/4 cup diced bell peppers (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • Parmesan and red chili flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay out the flour tortillas on a clean surface.
  3. In the center of each tortilla, spread a tbsp or 2 of pizza sauce, then layer a portion of the cooked pepperoni, shredded cheeses, and any optional toppings you desire.
  4. Drizzle another spoonful of pizza sauce over the toppings in each tortilla.
  5. Sprinkle Parmesan, dried oregano, dried basil, salt, and pepper over the toppings.
  6. Fold in the sides of each tortilla and then roll it up tightly to form a burrito.
  7. Place the burritos on a baking sheet seam side down.
  8. I like to add a little spoon full of sauce and a bit more cheese on top for garnish! 
  9. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and the tortillas are slightly crispy.
  10. Once cooked, remove from the oven and let them cool for a few minutes before serving.
  11. Slice each burrito in half diagonally and serve with extra pizza sauce for dipping, if desired.

What’s The Best Way To Wrap A Burrito? 

A well-wrapped pizza burrito should be compact, with the filling secured inside but not over stuffed. Remember that practice makes perfect, so don’t worry if your first few attempts aren’t perfect! Follow these steps for best results! 

  1. Place your filling slightly below the center of the tortilla, leaving space at the edges.
  2. Fold the sides of the tortilla over the filling.
  3. Lift the bottom edge of the tortilla over the filling, tucking it in snugly.
  4. Begin rolling the burrito upwards from the bottom, keeping the sides tucked in.
  5. Continue rolling until the burrito is fully wrapped, with the seam side down.

Here is a list of popular add-ins and substitution ideas for your pizza burrito.

What Ingredients Do You Need?

  • Large Low Carb Flour Tortillas – I used Mission Carb Balance Flour Tortillas. They aren’t “huge” but are large enough to make a wrapped burrito. 
  • Pepperoni Slices – This is just what I had on hand in the refrigerator! You can use salami, pastrami, sausage, the list is endless! 
  • Pizza Sauce – I had a jar of standard marinara in the cupboard so that’s what I used.
  • Bell Peppers- Fresh red, yellow, and orange bell peppers add a zesty bite to your Pepperoni Bell Pepper Pizza Burritos. 
  • Spices- I used dried oregano, dried basil, salt, pepper, and red chili flakes. 
  • Parmesan Cheese- It’s a nice addition to the overall meal to add a sprinkle of Parmesan just like you would a slice of pizza! 

How Do I Store My Pizza Burritos? 

If you have leftover Pepperoni Bell Pepper Pizza Burritos, store them in an airtight container in the refrigerator. They will stay good for 3-5 days and you can eat them hot or cold. Other storage options include plastic wrap and ziplock bags. 

For longer storage you may wrap them in plastic wrap and put them inside a large airtight ziplock bag in the freezer. You can store them for up to 3 months when frozen. Then just remove the amount you want to serve, thaw slowly overnight in the refrigerator, then reheat in the oven or microwave. The oven is best for texture as the microwave may result in too much moisture retention which means it may be too mushy. 

Can I Make Them In My Air Fryer? 

Yes you can cook your Pepperoni Bell Pepper Pizza Burritos in the air fryer! Just follow the directions the same until the burritos are prepped. Then line your air fryer basket with a small sheet of foil. Place them on the foil and air fry at 350 degrees F for about 6 minutes.
