June 7, 2015

I love buffalo chicken, and I love baked potatoes, so why not combine the two! 🙂 This stuffed potato was delicious, and filling.. So easy to make and only 6 smart points when using a small-medium sized potato.

Loved this! We made it with leftover shreded chicken from the Fajita pasta bake and it was delicious and easy. Thanks!

I know that it would be better with cooked shredded chicken, if you didn’t have any on hand would canned chicken be okay to use?
