You won’t want to miss out on these decadent Weight Watchers Snickerdoodle Bars. This recipe is almost like a fusion of a cinnamon-y Snickerdoodle cookie and a fluffy, sweet piece of cake—and it is only 5 points per serving.

These Snickerdoodle bars will blow you away with their texture and flavor. They’re so light, cakey, and fluffy on the inside but taste exactly like a thick Snickerdoodle cookie. The top layer also forms a cinnamon crust like with traditional Snickerdoodles. I could explain how delicious they are all day, but it’s just one of those sweet treats that you have to experience yourself to truly understand.

This is a reduced-sugar recipe, and it uses a butter substitute to keep the WW points lower. However, with the cinnamon sugar mixture on top, they have the perfect amount of sweetness. And if you would rather use a zero-calorie sweetener to lower the points even more, you definitely can by using a 1:1 substitute.

Instructions for making Weight Watchers Snickerdoodle Bars

  1. Preheat oven to 350°F. Make the cinnamon sugar and set aside. In a medium bowl, gently mix together the light butter substitute and the granulated sugar. (The substitute I used is rather soft, so I didn’t have to soften it).

2. Once combined, add the egg and vanilla extract and stir to combine. Add the dry ingredients and gently fold everything until a dough forms. The dough will be slightly loose but still thick enough to spread.

3. Spread the dough into a greased or parchment-lined 9 x 9 baking dish. Once you have it in an even layer, scatter the cinnamon sugar mixture on top and gently press it into the dough to coat the entire surface.

4. Bake the snickerdoodle bars in the 350°F oven for 22 to 27 minutes or until thoroughly baked. Be careful not to overbake them because reduced-sugar treats tend to dry out quicker. It is okay if they look soft; a toothpick or knife inserted should come out pretty clean with just a few moist crumbs, and the bars should not look wet or shiny.

5. Slice into 12 even portions and enjoy!

Variations and Substitutions

  • Snickerdoodle Bars with Icing: If you have some extra points to use up, consider making a simple glaze or even cream cheese icing to decorate the bars. The tangy yet sweet icing will surely take them to the next level.
  • Sweetener vs. Sugar: You can use monk fruit sweetener or a different 1:1 sugar replacement if you want to lower the points even more.
  • Butter Replacement: You can use your preferred butter replacement. I’ve found that each one behaves a bit differently and will produce slightly different results than actual butter. I typically have good results with the I Can’t Believe It’s Not Butter, Light!
  • 9 x 13 Pan: Double this recipe, and it will fit in a 9×13 pan and yield 24 servings!

Tips and Tricks for Making Weight Watchers Snickerdoodle Bars

  • Make sure that your baking soda is not expired. If it has been sitting in the cupboard for a while, it might not be as effective, and the bars might turn out flat.
  • If your flower is lumpy, make sure to run it through a sieve before using it in the recipe.
  • For best results, separately whisk the egg first before adding it to the butter and sugar mixture. This will help it evenly distribute better.
  • Be careful not to overbake the bars because they will turn out tough, dry, or crumbly.
  • Store any extra in a resealable gallon-sized bag or in an airtight container. To keep them extra moist, avoid pre-slicing the bars several days in advance.
