This delicious mini Tortilla Quiche Bake is just 3 points per serving and is such a perfect, easy breakfast. The concept for this quiche is so clever because it uses a tortilla in place of a traditional crust, which saves time and effort. I love how you can mix the quiche filling right in the tortilla shell, so you aren’t making tons of dirty dishes in the process, either. And by the time your oven is preheated, you’ll have it assembled and ready to bake.

I’ve seen different versions of this quiche going around on TikTok, so I thought I would make a lightened-up version of it. The only thing I really changed was that I used a low-carb tortilla and fat-free cottage cheese instead of regular. I also used my own add-ins (and topped it with some light sour cream and hot sauce after baking). But, you can include any fresh veggies that you like! If you have pre-cooked meat, you can sprinkle some of that on, too.

This quiche serves 2, but it is easy enough to make multiple of them if needed. It almost reminded me of a breakfast pizza! So, if you have a bigger family, you can make a few of these tortilla quiches with assorted toppings, and everyone can customize to their preferences.   • 1 low-point burrito-sized tortilla ( I used Mission Carb Balance)
  • 3 Eggs
  • ⅔ cup Fat-free cottage cheese
  • ⅓ cup Fat-free shredded mozzarella cheese
  • ⅓ cup Bell pepper, any color, chopped
  • ¼ cup Red or yellow onion, chopped
  • ½ cup Mushrooms, chopped
  • ¼ cup Tomatoes, diced
  • ¼ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • salt and black pepper to taste
  • Other Add-In Ideas: fresh spinach, sausage crumbles, shredded carrots, chopped ham, zucchini, bacon, feta cheese, etc.

Instructions for making WW Tortilla Quiche Bake

  1. Preheat oven to 350F. Place the tortilla in a cake pan or pie plate where the edges will go up the sides slightly to create a shell. Add in the eggs, cottage cheese, Italian seasoning, garlic powder, salt, and pepper; carefully whisk to combine without breaking the tortilla.

2. Top the egg mixture with the bell peppers, onion, mushrooms, and tomatoes. Lastly, sprinkle on the mozzarella shreds.

3. Bake the mini quiche in the oven for 20-25 minutes or until the center is set. Serve topped with sour cream or Greek yogurt, fresh herbs, etc.

Variations and Substitutions

  • Reduce the Points More: Omit the mozzarella shreds, and it will be just 2 points per serving.
  • Splurge Version: add some meat, which will also give the quiche a protein boost and make it heartier in general.
  • Tortilla Type: You can use flavored tortillas, such as the spinach herb or tomato basil tortillas, or even regular corn tortillas. Any kind will work.
  • Cottage Cheese Sub: I have not tried swapping the cottage cheese with anything, but I think Greek yogurt would be a great substitute. You can also use regular or low-fat cottage cheese instead of fat-free.

Tips and Tricks for Making The Best Tortilla Quiche Bake

  • To store leftovers, keep them in a resealable bag or in an airtight container in the fridge. I recommend eating the leftovers within 2-3 days. You can reheat in the microwave, oven, or air fryer!
  • To get the top nice and golden, flip on the broiler for the last minute or so during baking. This will give the quiche more color.
  • You can certainly have this whole quiche to yourself if you want a more substantial breakfast or brunch. It is 5 points if you eat the whole thing. I personally like to split it into two servings and then enjoy it with a side like fresh fruit or a parfait.
  • If you accidentally break the tortilla when whisking the eggs, the filling will leak out into the pan and might cause it to stick underneath, so use caution. You can also mix the egg mixture separately and then pour it into the tortilla before adding the toppings.
