  • 2 Eggs
  • ⅓ cup Unsweetened plain almond milk
  • ¼ tsp Cinnamon
  • 2 pinches Nutmeg
  • 1 tsp Vanilla
  • ½ cup Nonfat plain Greek yogurt
  • 3 tbsp Powdered sugar
  • Butter or cooking spray, as needed
  • Fresh strawberries (sliced), as needed

Instructions for making Weight Watchers Stuffed French Toast

  1. In a shallow bowl for dipping, make the custard by whisking together the eggs, milk, cinnamon, nutmeg, and vanilla. Whisk until frothy and combined.
  2. In a smaller bowl, make the yogurt filling by mixing the Greek yogurt and powdered sugar.

3. Assemble the French toast by spreading the yogurt filling on each slice of bread, being careful not to make it too thick (if there is any leftover, you can use it as a topping).

4. Place sliced strawberries on two of the slices and then place the other slices on top like a sandwich. Soak each side of the stuffed French toast in the custard mixture, dipping it to your liking, depending on how custardy you want the bread to be.

5. Preheat and grease a nonstick skillet over medium-high heat. Transfer the soaked bread to the skillet and cook undisturbed until golden brown, a few minutes. Flip and cook the other side until golden and cooked through.

6. Serve immediately with the remaining yogurt mixture, additional fresh strawberries, or other preferred toppings.

Variations and Substitutions

  • Cream Cheese Stuffed French Toast: you can substitute the Greek yogurt with whipped, softened cream cheese if you wish. This mixture might be thicker and harder to spread, but you can thin it out with a splash of milk.
  • Stuffed French Toast with Ricotta: You can also use ricotta cheese instead of Greek yogurt if you prefer the flavor and texture of it.
  • Gluten-Free Stuffed French Toast: Use your favorite gluten-free bread to make this recipe gluten-free! You’ll also want to make sure that all of your other ingredients don’t contain any gluten. They shouldn’t, but sometimes things are made in the same factory and might have cross-contact.
  • Topping Ideas: some other topping ideas include powdered sugar, pure Maple syrup, honey, and other fresh fruit such as sliced bananas, blueberries, or blackberries. You can also slather the toast with your favorite light butter substitute or use real butter.

Tips and Tricks for Making Weight Watchers Stuffed French Toast

  • Soak the bread to your liking depending on how custardy you like your French toast. I soaked mine pretty well, but you can just do a quick dunk if you wish. If you have leftover custard mixture, you can save it for a couple of days and use it the next day to make a new batch of French toast.
  • Be careful not to overfill the center; otherwise, it will be messy and ooze out while cooking. I made sure to leave some room around the edges where the crust was so that this wouldn’t happen. And the leftover sweetened yogurt that I had was later used as a topping.
  • For a thicker filling, you can add a teaspoon or so of sugar-free jello pudding mix, which will help firm it up. I suggest using vanilla or cheesecake-flavored pudding. After adding the pudding mix, place the yogurt in the refrigerator for a few minutes.
  • This French toast doesn’t reheat well. It is best to make only as much as you’ll eat because the insides of the bread will get soggy from the filling.
