This banana cinnamon French toast turns a classic breakfast into something genuinely special. Thick slices of bread dipped in a banana-infused egg mixture spiced with cinnamon, cooked until golden — each piece is custardy inside, caramelized outside, and naturally sweet from the banana. No need for a ton of maple syrup because the banana does most of the sweetening work. It’s a step up from regular French toast with almost no extra effort, making it the perfect choice for any morning when you want breakfast to feel like an event.

  • Swap: Use whole grain or brioche bread for different textures — brioche gives you a richer, more dessert-like result.
  • Make-ahead: Mix the banana egg batter the night before and refrigerate; give it a stir in the morning before dipping.
  • Storage: Cooked French toast keeps in the fridge for 3 days; reheat in a toaster or skillet to restore the crispy exterior.
  • Variation: Add a splash of vanilla extract and a pinch of nutmeg to the egg mixture for a more complex, warm spice flavor.
  • Serving: Top with fresh banana slices, a light drizzle of maple syrup, and a dusting of cinnamon for a beautiful breakfast plate.

If you know anything about me, you might know I am not a fan of eggs.. I wish I liked them but I just can’t seem to acquire a taste. So I try to get creative when it comes to”egg” type dishes, like your basic french toast. This banana french toast is definitely different but so delicious, and only 5 smart points or 5 points plus for 3 slices.

  1. When you say you do not use the recipe builder, what makes you say that? Is there a difference in the math if you don’t? I was trying to figure out how to log something from your site, so I used the recipe builder and it made it more points than what you said. If I don’t use the recipe builder, I don’t know how to figure points. Haha I’m brand new to your site and new to trying new things for eating! Lol Thanks for any help!! Love the recipes!!!!

    1. Hi Nikki.. I don’t use the recipe builder for a few reasons, one being that I do not count my fruit, weather it be in a recipe or not, it is just what works for me.. If you enter a recipe into the builder with fruit it will give it points.. also I live in Canada and shop in the U.S often and I have seen first hand that products vary in points so I figure out points for each ingredient, add it all up then divide by my yield, it to me is the best and safest way, I always trust my labels over the builder ๐Ÿ™‚
