Ingredients Needed for Weight Watchers Strawberry Pie

For the crust:

  • 1 ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • 2-4 tablespoons cold water
  • 3 tablespoons I Can’t Believe It’s Not Butter (Light)
  • 1 tablespoon low-calorie sweetener or sugar (I used monk fruit with erythritol)

For the filling:

  • 1 (16 oz.) container of fresh strawberries (ends cut off, sliced or quartered)
  • 1 package zero-sugar strawberry Jell-O
  • 6 tablespoons low-calorie sweetener (or sugar) 
  • 1 ¼ cup water
  • 3 tablespoons cornstarch

Instructions for Making Weight Watchers Strawberry Pie (Step by Step)

Bake the crust:

  1. Preheat the oven to 400°F.
  2. Add the dry ingredients in a bowl and mix to disperse the baking powder and sweetener.
  3. Add the cold water and melted butter, forming a dough with your hands. (Start with 2 tablespoons of water and slowly add more until the mixture is no longer crumbly).
  4. Form dough into a disc, wrap in plastic, and refrigerate for 30 minutes.
  5. Roll out the dough between plastic wrap pieces and then transfer it to a greased 9-inch pie tin.
  6. The dough will fit the pan exactly; you might have to work it with your fingers. It will feel thin, but the baking powder helps it puff up a bit.
  7. Bake the crust for 25 minutes with pie weights (line the crust with foil or parchment and fill with dry rice or beans).
  8. Remove the pie weights and bake the crust for 10 to 15 minutes longer or until it is thoroughly baked and golden brown.

While the crust is cooling, you can make the filling.

  1. Bring the water and cornstarch to a simmer, allowing it to simmer for 1-2 minutes.

    I made a Weight Waters strawberry pie for years using sugar free cook and serve vanilla pudding mix and sugar free strawberry gelatin mix. When they discontinued making the Jello Sugar Free Vanilla Cook & Serve Pudding mix and I couldn’t find a replacement, I researched how to make vanilla pudding. I decided to try using the ingredients in a simple vanilla pudding (minus the milk and subbing a non-caloric sweetener) as a replacement for the pudding mix. Looks like you did the same for this recipe. The only things I do differently is that I make it crustless, only use 2 tablespoons of cornstarch, and add a teaspoon of vanilla and 1/4 teaspoon of salt.
